Add salt and pepper, to taste. Refrigerate mixture 1 hour. Using fingers, form about 1 tablespoon of cream cheese mixture at a time into balls. Refrigerate 30 min- utes on small baking sheet. Before serving, roll each ball into shredded cheddar cheese to cover. Place each ball on round cracker. Cut small triangles from carrots for beaks and feet. Press carrots onto cheese balls. Nonstick cooking spray 1 1/3 cups liquid egg whites 1 can (15 1/2 ounces) no-salt-added black beans, rinsed and drained 4 whole-wheat tortillas (6 inches, lowest sodium available) 2 medium avocados, sliced 1/4 cup hot sauce or salsa (lowest sodium available, optional) Lightly spray large skillet with nonstick cooking spray. Heat over medium heat. In skillet, stir egg whites constantly with rubber spatula to scramble. Cook until eggs are almost set. Add beans, stirring until combined and heated through. Microwave tortillas on high 45 seconds. Transfer to work surface. Spread egg mixture in center of each tortilla. Top with the avocado and hot sauce, if desired. For each burrito, fold two sides of tortilla toward center. Starting from closest unfolded side, roll bur- rito toward remaining unfolded side to enclose filling. Transfer with seam side down to plates. SOUTHWEST QUINOA AND EGG BREAKFAST BOWLS To find recipe ideas, visit heart.org/together. 1/4 cup uncooked quinoa, rinsed and drained 2 medium tomatoes, chopped (about 2 cups) 1 cup no-salt-added frozen corn, thawed 1/2 medium avocado, pitted and diced 1/4 cup chopped green onions 1/2 cup chopped fresh cilantro (optional) nonstick cooking spray 4 large eggs 1/8 teaspoon salt 1/4 teaspoon pepper red hot-pepper sauce, to taste (optional) Cook quinoa according to package directions. Remove from heat. Spoon quinoa into four bowls. Top each with toma- toes, corn, avocado, green onions and cilantro, if desired. Lightly spray large skillet over medium-high heat with nonstick cooking spray. Crack eggs into skillet. Sprinkle eggs with salt and pepper. Cook, uncovered, 3-4 minutes, or until egg whites are set but yolks are still runny. Using spatula, carefully transfer one egg sunny side up into each bowl. Sprinkle with hot sauce, if desired. BEEF AND BLUE CHEESE STUFFED MUSHROOMS Visit BeefLovingTexans.com to find more recipes. 2 packages (8 oz. each) button mushrooms 1/4 teaspoon salt 1/2 pound ground beef 1/3 cup blue cheese 1/4 cup whole-wheat breadcrumbs 3 tablespoons green onions 1/2 teaspoon steak seasoning blend chives (optional) Preheat oven to 375 F. Remove stems from mush- rooms; reserve. Season mushroom caps with salt; set aside. Mince stems to yield 1/2 cup; discard remaining stems. Combine ground beef, minced stems, blue cheese, breadcrumbs, green onions and steak seasoning. Spoon beef mixture evenly into mushrooms. Place stuffed mushrooms on rack in broiler pan. Bake 15-20 minutes. Sprinkle with chives, if desired. The Carolina Foothills Foundation's (CFF) 80's tribute concert on Saturday, April 15 raised more than $7,000 thanks to the support of the community and sponsors. One hundred percent of the proceeds will go back into Rutherford and Polk counties to fund eldercare, wellness and youth development programs. The concert was the foundation's inaugural fundraising event and featured live music from the 1980's tribute band, LazrLuvr, with many attendees dressed in fun outfi ts inspired by the decade. The North Carolina Department of Health and Human Services today announced a change to the Project Access COVID Tests program (Project ACT) that will allow all North Carolina households to request free, at-home COVID-19 tests through June 30, 2023. Residents are encouraged to order additional free tests while supplies last. Once limited to specifi c zip codes, all North Carolina households can now order free COVID-19 tests through www.AccessCovidTests.org. Each household will receive two kits with fi ve tests per kit, typically within a week of ordering. Households can place a new order for tests once per month throughout the duration of the program. NCDHHS has already distributed 383,390 tests to North Carolina families through Project ACT. "Access to free testing is expected to change with the end of the public health emergency, but partnering with Project ACT helps us continue to provide this access, especially to households who may have limited access to health care," said Susan Kansagra, M.D., Director, NCDHHS Division of Public Health. "Testing quickly helps people to know when to stay home and when to seek treatment." Preparation is key to prevention, order your test kits in advance as part as your "My COVID-19 Plan." Get tested if you have symptoms or if you have come in close contact with someone with COVID-19, even if you are up to date on your vaccines. Check your test's expiration date before using. If the date has passed, the test may still be appropriate to use; check for an FDA extension at https://covid19.ncdhhs.gov/ NewDate.
