While 2020 has been un- predictable and unbelievable, one thing has been consistent and unchanging. It's each day's twenty-four-hour cycle. Nothing has slowed it down, sped it up, or altered its guaranteed coming and going. As a result, deer season is dragging me one day closer to its arrival. I'm in full preparation mode. Stands are being put up, cam- eras are being placed, and feeders set where allowed. I'm also getting ready to disc up a fi eld for late summer plant- ing. Since I live on the boarder of three states, I am con- stantly double-checking seasons, limits, and regulations. It's just how it is around here. Except for an early Tennes- see velvet-antler hunt, Kentucky is always fi rst to welcome hunters to the woods. Normally they welcome us when it's too hot to go. So, unless I know there's a big one perusing the area, I wait until cooler weather is the rule. I've noticed how preparation brings new excitement and expectation. At the end of every year, it's just the opposite. Toward the end of each season, high hopes are rare, and that means we get impatient and uncommitted. But beginning about now, things change. We've forgotten the pain of childbirth and are ready to have another baby. (At least that's what I'm told the child bearers do) And it doesn't take much to renew our passion. Just the other day, I moved a tree stand thirty yards and I felt like I had just increased my odds by a 100 percent. I don't know if I'll be able to pass on all those ten-pointers, just to get to that twelve! I hope you are thankful sometimes our memories are short. I hope you're thankful pain may run deep, but most of the time it doesn't run long. And I hope you also see that sometimes, the smallest tweak, can bring about a renewed excitement. We need this right now. Some of you have suf- fered some losses lately. Your business and perhaps your family have experienced some real pain from the world- wide pandemic. You may be covered and cornered by confusion. I understand. But know this. God works in real time, and his promises are as consistent and certain as my upcoming deer season. And here is one promise God gave Jeremiah to give to us. "Great is his faithfulness; his mercies begin afresh each morning." So, tomorrow when you get up, don't look at the past more than a few seconds. Its pain is not meant to keep you from the next blessing. It's only there to remind you of what God brought you through to get it. (The recipes in today's Cooking Corner are from "The Good Neigh- bor Cookbook" published some years ago by the Cleveland County Chapter American Red Cross.) GOOD CHILI Darrell Austin 1 pound ground beef ½ stick margarine 2 Tbsp. chili powder 1 Tbsp. red pepper 1 cup catsup Salt and pepper Melt margarine in sauce pan. Add ground beef and stir constantly until brown. Add other ingredients and simmer about 15 minutes. Remove from heat and leave covered until served. Drain excess grease. Excel- lent on hot dogs and ham- burgers. Simple but good. SQUASH CASSEROLE Nellie Loy 2 ½ cups squash (cooked) 1 small onion ¾ stick margarine 1 can chicken soup 1 cup Pepperidge Farm dressing 1 cup grated cheese Cook squash and onion until tender, drain. Add margarine, soup and stuff- ing. Pour into casserole dish. Spread cheese over top and sprinkle stuffing. Bake at 425 degrees, cov- ered for 15 minutes. Un- cover and cook additional 15 minutes. BBQ SAUCE Bonnie Cates 1 cup catsup 4 Tbsp. brown sugar 3 shakes Worcestershire 1 Tbsp. onion, chopped 2 Tbsp. green pepper 1 Tbsp. mustard ¼ cup oil Simmer for 10 minutes. CUBE STEAK Bonnie Price 4 pieces of cube steak Flour and use meat tender- izer. Fry in oil over medium heat in fry pan 5 minutes until brown and turn. Place in 6x10 baking dish. 1 can Campbell's Golden mushroom soup Spoon undiluted soup onto top of cube steak. Fill the can 2/3 full of water, pour into edge of baking dish. Do not wash off any of thick soup from top of meat. Bake in 350- degree oven 1 hour. Turn off, leave in oven 1 more hour. If any liquid remains in baking dish, lift out meat onto serv- ing plate and serve. Good next day cold. The N.C. Division of Motor Ve- hicles is temporarily waiving road tests for those drivers seeking a limited provisional license or a full provisional license (Level 2 and Level 3 of the graduated licensing program). For Level 2, drivers must meet the following criteria: • Be 16 or 17 years old • Have their Level 1 Limited Learner Permit for at least 12 months • Completed at least 60 hours of supervised driving, including time at night • No moving violations, seat belt or cell phone violations within the last six months • Covered under a liability in- surance policy For Level 3, drivers must meet at least one of these conditions: • Currently hold a Level 1 per- mit, are at least 18 years old, and meet all requirements to obtain the Level 2 Limited Provisional License including not being con- victed of a motor vehicle moving violation, seat belt infraction or un- lawful use of a mobile phone. • Have received training and passed a driving course from a certified North Carolina driving school approved by NCDMV within the previous 12 months and have not been convicted of a motor ve- hicle moving violation, seat belt in- fraction or unlawful use of a mobile phone. • Previously held a North Carolina driver license that has not been expired more than one renewal cycle and was in good standing at the time of expiration. • For drivers who are 18-65 years old with a license not expired more than eight years. • For drivers who are 66 or older with a license not expired more than five years. • Are from any other state, district or territory that has North Carolina license reciprocity. They must provide their most recent li- cense and a certified five-year driv- ing record. Drivers who qualify for the waiver will be issued a license of the appropriate length for their age, either eight or five years. How to Get Your License Those qualified for a road test waiver must make an appointment at a DMV license office . Chose "Driver License – First Time" as the type of appointment, then pick an office and select a date and time. Make sure to bring all the re- quired documentation for your ap- pointment. For Level 2: • Proof of insurance • A driving log proving 60 hours of supervised driving, including time at night • A parent or a legal guardian For Level 3: • Provide all documents listed here. Next Steps Once the information is veri- fied, the driver will get their picture taken and they will be issued a temporary license. A hard copy of the license will be mailed to their address. Those who use the waiver for a Level 2 limited provisional license will still need to pass a road test to move up to the Level 3 full provi- sional license, which allows unsu- pervised driving at any time. Level 3 drivers do not need to return to take a road test. Waivers under this special pro- vision do not apply to drivers who are governed by Legal Presence or Lawful Status or drivers in the Medical Review program. This waiver will remain in place until DMV resumes road tests, which is anticipated when the state reaches Phase 3 of its re-opening.
