The last time I saw the Patoka Riv- er in Winslow it was half full and no more rain since last Sunday but as of this past Sunday we were supposed to have some rain but none as of yet. The mowers have not been heard quite as much but the grass will grow a little more under all the leaves that have fall- en. Some of the trees are colorful but the yellows haven't popped out yet, the orange, reds, browns, are more of an eye catcher. The deer are out in many of our Winslow yards and Norm saw four deer in our area. We still have the two squirrels but one is creeping closer to the house than usual. The walnuts are falling and the persimmons are sweet. Have you ever felt like just getting away from the house? Well, the ani- mals do, too. Ours got off her chain and ran around our area, staying in eye sight, then she got tired and we got to hook her up again. She doesn't do this everyday like some other animals do, but she did have a good run, if only for a few hours. We built another lean to for the fire- wood but now we have to get more fire- wood in this big area so we can stay warm this winter at the cabin. This will also store the lawn mower. Some of our stars know but for the rest of our stars, Norm has started working again with Bill, Salton, Ad- am, and Josh at Mac's Heating and Air. Congrats, Norm. This week has been meetings all week long for Laura, Kyana, Norm and me, but the best was on Satur- day when Kyana and the Winslow Girl Scouts went on an overnight campout. Speaking of the Winslow Girl Scouts, they are selling peelers to raise money for the troop. The peel- ers have discounts to various places and are $10 each. Please see one of the Winslow Girl Scouts to help support the troop. They are selling them until mid-November. I told you all about my fall two weeks ago on a rainy night. Well since then the big toe is still swollen and bruised but no hurting, unless I extend it too much and the knee is also swollen a bit but it doesn't hurt either unless I turn it in the wrong way. Otherwise I can still walk on it. Since we have the stove burning at the cabin, we got out the iron kettle and fixed our supper one night. It was yummy! To everyone who drives our roads, keep an eye open for the deer as they cross the roads. We saw four deer last week in a field by Line Road and Indi- ana 64. To all the hunters until the end of December, we wish you well as you bag that big buck and stay safe as you climb into your tree stand. As the lights begin to dim on this weeks ramblings, keep an eye on fam- ily and friends, slow down, and enjoy your surroundings, have fun as you decorate for Halloween, and as al- ways smile, wave, and say Hi to every- one you see this week. GINGERBREAD WITH LEMON SAUCE By Monica Sinclair When my husband and I got married, we had gingerbread as our wedding cake. It was absolutely delicious and moist. However, we didn't get to enjoy very much of it because while we were on our honeymoon, our children ate what was left over. So, when I saw this recipe this week, I knew I had to put this in my column and I will be making it soon. If you don't like lemon sauce, you can just top it with cool whip. Enjoy! INGREDIENTS 1 cup shortening 1 cup sugar 1 cup molasses 2 large eggs 3 cups all-purpose flour 1-1/2 teaspoons bak- ing soda 1-1/2 teaspoons salt 1 teaspoon ground gin- ger 1 teaspoon ground cin- namon 1 cup hot water LEMON SAUCE: 1/2 cup sugar 2 teaspoons cornstarch Dash salt Dash nutmeg 1 cup half-and-half cream 2 large egg yolks, beat- en 2 tablespoons butter 3 to 4 tablespoons lemon juice 1 teaspoon grated lem- on zest DIRECTIONS 1. Preheat oven to 350°. Beat shortening, sugar, mo- lasses and eggs until well blended. Combine next five ingredients; add to molasses mixture alter- nately with hot water. 2. Pour into a greased 13x9 -in. baking pan. Bake un- til a toothpick inserted in center comes out clean, 35 -40 minutes. Cool on a wire rack. 3. Meanwhile, for lemon sauce, combine first five in- gredients in a small saucepan until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat. 4. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Re- move from heat. Gently stir in butter, lemon juice and zest, increasing juice if needed to thin sauce. Serve with warm cake. Refrigerate leftover sauce. Yield: 20 servings.
