I haven’t been able to put it down. I’m going to the kitchen with this cookbook in hand and making some great things to eat! Grits Casserole DROPS TO CRITICALLY LOW LEVELS RED CROSS ASKS ELIGIBLE BLOOD DONORS TO MAKE APPOINTMENTS The American Red Cross Carolinas Blood Services Region is facing a critical blood shortage and today issued an appeal for blood donors. Many donors are busy or traveling, school is out of session and donations in May and June dropped to the lowest levels the Red Cross has seen during this timeframe in over a dozen years. Demand for blood remained steady during this same period, which is why the Red Cross needs people—now more than ever—to roll up a sleeve and give as soon as possible. All types are needed, but especially O negative, which can be used to treat any patient. The Red Cross has responded to more than 40 major disasters in more than 30 states over the past three months alone – delivering help and hope to people affected by floods, tornadoes and wildfires. But there’s another, more personal, kind of disaster which can happen to anyone at any time if blood is needed and it’s not available. “As a physician, I have seen first-hand how blood transfusions can truly help save lives,” said Dr. Thomas Lightfoot, medical director of the American Red Cross Carolinas Blood Services Region. ”However, a critical blood shortage like the one we’re experiencing right now could have a devastating effect on a patient whose survival may depend on blood being there when needed.” Longtime blood donor Keith Eddins knows that feeling firsthand. Six months ago, he was only three miles from his home in Randleman, NC, when his car crashed into several deer and he suffered critical injuries, including a skull fracture, broken back and internal injuries. That day in the emergency room, doctors used 14 units of blood to stabilize Eddins. After eight surgeries, Eddins had received a total of 22 units of blood. The Red Cross Carolinas Blood Services Region provides lifesaving blood to 103 hospitals and must have 1,600 people give blood and platelets each weekday to meet hospital demand. Accident victims, as well as patients with cancer, sickle cell disease, blood disorders and other illnesses receive lifesav- ing transfusions every day. There is no substitute for blood and volunteer donors are the only source. Most healthy people who are 17 years of age, 16 with parental consent, who weigh at least 110 pounds, are eligible to give blood. Please bring your Red Cross blood donor card or other form of positive ID when you come to donate. JENNIFER WATSON shares with us her recipe for Grits Casserole! 4 cups water; 1 cup old fashioned grits (not instant); 1/4 cup butter; 1 teaspoon salt; 2 cups cheddar cheese, shredded; 6-8 slices bacon; 4 eggs; 1 cup milk. Boil water, grits, but- ter and salt in quart saucepan. Reduce heat and simmer for 10 minutes. Stir in cheese until melted. Allow grits to simmer on low while frying bacon. In a small bowl, beat eggs with milk. remove grits from heat and combine with egg mixture. Pour into greased 9 x 13 casserole dish. Bake 20-30 minutes at 350º. Top with crumbled bacon and additional cheese. Don’t knock it until you’ve tried it. It’s very good. The old fashioned grits is the key. MEREDITH MILLER shares her recipe for Greek Chicken with Potatoes & Feta Cheese. 2 chicken breasts, boneless, skinless and cut into chunks; 3 small red potatoes, quartered; 1/2 to 3/4 cup feta cheese, crumbled (I used 3/4); 1/4 cup Kalamata olives, chopped; 1 tablespoon lemon juice; 1 teaspoon olive oil; 3/4 teaspoon dried oregano; 1/2 teaspoon salt; 1/4 teaspoon pepper. Saute all ingredients in pan on medium heat until chicken is done. garnish with additional 1/4 cup Feta and one tablespoon oregano, if desired. (to me this is a must). I served this with steamed asparagus and cherry tomatoes rolled in olive oil. Fortissimo! Disappearing Casserole SANDRA BLANTON properly named this Disappearing Casserole. Simple, easy, so tasty that it does go quickly! 1 pound ground beef; 2 small cans tomato sauce; 1 tablespoon ketchup; dash of oregano; salt and pepper to taste; 5 ounces maca- roni, cooked; 3 cups grated cheese (your choice). Brown beef. Add tomato sauce, ketchup, salt, pepper, and oregano; simmer for 30 minutes. Add cooked macaroni and 2 cups cheese; pour into baking dish. Top with 1 cup cheese. Bake at 350º for 30 minutes. Very enjoyable and a crowd pleaser. So when is the last time you went into the kitchen and “showed the love”? See you next week.
