Aunt Nellie's Diced Pickled Beets (1/2 jar or 2 individual diced pickled beet cups) 2 tablespoons fresh basil, cut into thin strips 2 tablespoons unsalted butter 1/2 teaspoon garlic salt, or to taste Place two bread slices on cutting board. Drizzle with hot honey then add 4 ounces brie evenly across bread. Drain beets and pat dry. Add evenly on top of brie fol- lowed by basil and remaining brie. Spread 1 tablespoon butter on one side of remain- ing bread slices. Sprinkle with 1/4 teaspoon garlic salt. Place top piece of bread on each sandwich. Heat cast-iron or frying pan over medium-low heat then add sandwiches butter sides down. Butter top sides and add remaining garlic salt. Cook about 5 minutes on each side, or until bread is golden brown and cheese has melted, flipping halfway through. Once sandwiches have cooked on both sides, remove from heat and serve. (approx. 4) boneless, skinless chicken breasts 8 slices sharp cheddar cheese 1 can READ German Potato Salad with sauce 8-12 bacon slices nonstick cooking spray freshly ground pepper, to taste Preheat oven to 400 F. Using sharp knife, slice pocket or slit into each chick- en breast and fold open. Place two slices sharp cheddar cheese in pockets then spoon 4 ounces potato salad onto cheese. Fold chicken over and close so cheese and potatoes are inside pockets. Take 2-3 bacon slices and completely wrap stuffed chicken breasts, tucking loose ends of bacon on under- sides of chicken. Spray baking dish with nonstick cooking spray then place bacon wrapped chicken on tray. Season chicken with pepper, to taste. Bake approximately 40 minutes until internal tempera- ture of chicken reaches 160 F. Turn oven to broil on high (500 F) and broil 2-3 min- utes to crisp bacon until chicken reaches 165 F. Remove from the oven and rest 5 minutes then serve. Place pitas on nonstick baking sheet and bake 5-8 minutes until pitas are golden brown and chicken is heated through. Before he can climb down every chimney in the world, St. Nick has to try his luck on one of the world's largest natural chimneys. This family-friendly holiday event returns on December 2nd and 9th as Santa and his Elves set their sights on the Park for the 26th Annual Santa on the Chimney Event at Chimney Rock at Chimney Rock State Park. With assistance from his professional helpers at Fox Mountain Guides, Santa will rappel down the Chimney each hour on the hour from 11 a.m. - 2 p.m. Between trips down the Chimney, Santa will meet up with Mrs. Claus and take a break to pose for photos with attendees. Santa's elves will be visiting the Park as well and will lead a hike to Hickory Nut Falls for explorers of all ages. The parks live animal ambassadors and their naturalist counterparts will make appearances as well for an Animal Encounter on the Outcroppings Deck. "We want to encourage families to enjoy the great outdoors year-round, especially during the holidays," Chimney Rock Management Director Emily Walker said. "Santa loves the adventure opportunities in Hickory Nut Gorge just as much as we do!" Santa is sending helpers to the Old Rock Café, too. The restaurant will host Breakfast with the Elves from 8 -11 a.m. both event days. Holiday-themed pancakes will be served for kids and kids-at-heart, and other breakfast classics will round out the menu. After a delicious breakfast, head up the mountain to see Santa preparing for his big night. Article Provided By: Jean Gordon Chimney Rock at Chimney Rock State Park to host 26th annual Santa on the Chimney On November 13, 2023, Agriculture Secretary Thomas J. Vilsack declared a natural disaster in the State of South Carolina based on damages and losses caused by drought that occurred from November 7, 2023. In accordance with Section 321(a) of the Consolidated Farm and Rural Development Act, 5 adjacent counties in North Carolina are named as contiguous counties where eligible family farmers may qualify for FSA emergency (EM) loan assistance. These counties are: Cleveland, Henderson, Polk, Rutherford and Transylvania. Gary E. Guinn said that effective November 13, 2023, farmers in Henderson, Polk, Transylvania and Rutherford Counties may apply for EM loans for physical and/or production losses. July 15, 2024 is the deadline for fi ling an application. The local offi ce is located at Triple Springs Road, Hendersonville, NC 28792 and has offi ce hours of 8am to 4:30pm. Gary E.
