In Good Taste of gratitude also goes to Casa's volunteers who will be helping in various ways throughout the day. Casa Guadalupe hopes that many people and families can attend Fiesta Latina and take part in the festivities and this fun, cultural event in our community! Choriqueso Empanadas Noelle with some of the students from the Read to Succeed program. event in Washington County, called "Fiesta Latina". It will serve as Casa's annual fundraiser and Latin American cultural celebration. The event will go from 11:00am to 6:00pm at the Regner Park Pavilions, and admission is free to the public! From 11am-noon, there will be a Spanish mass. Following that, there were be a variety of different Latin American entertainment on the Silver Lining Stage. From noon to 1:00pm, Casa's director, Noelle, will welcome the crowd and will sing some songs in Spanish, along with a Latino community member, Santos Vasquez. From 1:00pm to 1:45pm, the local Mexican dance group, Ballet Folklórico México en la Piel, will be performing. From 2pm to 2:45pm, experienced instructors of the popular dance exercise, Zumba, will be leading whoever is interested in dancing and having a good time. From 2:45pm to 3:00pm, there will be a jalapeño eating contest for brave contestants, and the winner will receive a prize. From 3:15pm to 4:00pm, there will be Latin dance demonstrations provided by a dance group from Fond du Lac called "Shut Up and Dance!". From 4:15pm to 5:00pm, a mariachi band from Milwaukee called Mariachi La Union will be performing. They will take a short break at 5:00pm, at which point we will be drawing names for all of our raffle prizes. So far, we have 22 raffle items that can be won, including a 9 piece tri-ply stainless steel cookware set by Regal Ware, a 3 month family pass to the Kettle Moraine YMCA, four tickets to Mt. Olympus water park, $200 in cash, and 2 club level tickets to a Milwaukee Brewers game! After the raffle drawings, Mariachi La Union will continue to provide entertainment until the end of the event. A local DJ, Jim Edgeworth with Edge Entertainment, will be providing DJ services during the event in between performers. During the entire event, Latin American food will be provided by two local establishments in West Bend: the Mexican restaurant, El Tapatio de Jalisco, and the Mexican grocery store and restaurant, La Mexicana. Jeff's Spirits on Main in West Bend will provide beverages including water, soda, and a variety of Latin American beer and wine. There will also be children's activities, games, and face painting. The West Bend Fire Department will provide tours of a fire truck for kids, and some members of the West Bend Police Department will be there to help provide child ID's. St. Joseph's Hospital will provide free blood pressure screenings from 1:00 to 3:00pm that day, as well. People who are interested in this service must sign up for it at the event. A huge amount 24 empanada discs for frying or baking, store-bought or homemade Choriqueso filling: 1 tablespoon butter or olive oil 1/2 white onion, finely diced – about 1 cup 1 lb. Mexican style fresh chorizo, pork or beef based on your preference 1/2 to 1 tablespoon of ground achiote - optional 3 cups or 12 ounces of grated mozzarella, oaxaca or monterrey jack cheese 1 cup or 4 ounces of crumbled queso fresco, Optional: jalapeno slices If baking: 1 egg yolk + 1 tablespoon water whisked together to use as egg wash to brush on empanadas To serve Avocado sauce 1. Heat the butter or oil in a frying pan over medium low heat, add the diced onions and cook until they are soft and translucent, about 5 minutes. 2. Remove the chorizo from the casings, break it up in chunks and add it to the onions. Cook the chorizo meat on medium heat until it is fully cooked; stir frequently to help break up the pieces of chorizo. Add additional achiote powder if desired. Let the chorizo cool down completely before using. 3. Mix the grated mozzarella with the crumbled queso fresco. 4. To assemble the empanadas add a spoonful of the cheese mix topped with a spoonful of the chorizo on to the center of each empanada disc. For extra heat you can add slices of fresh jalapeños. 5. Fold the empanada discs and gently seal the edges with your fingers. Twist and fold the edges of the empanadas with your fingers. For extra sealing you can use a fork to press down on the edges. 6. Chill the empanadas for at least an hour, this will help them seal better and prevent leaks. This is especially needed if you are baking the empanadas. 7. If baking the empanadas preheat the oven to 400 F. Also, brush the empanadas with egg wash right before baking to give them a nice golden glow. Bake the empanadas for 20-25 minutes or until golden. 8. Fry the empanadas in a deep fryer or in a frying pan, if using a frying pan, make sure to add enough oil to cover at least half of the empanada. Let the oil get very hot and fry each empanada until they are golden on each side, about a minute per side. Place the empanadas on paper towels to drain any excess grease and serve immediately. Serve the empanadas with avocado sauce. Avocado Sauce Senior Good Samaritan 2 ripe avocados 4 limes, juiced – a little over 1/2 cup of juice 1 medium sized bunch of cilantro, chopped 2-3 jalapeños or Serrano peppers, seeded and deveine 3-4 garlic cloves, crushed 1/2 cup olive oil 1 teaspoon ground cumin Salt to taste Owen Brady 1. Combine all the ingredients in a blender; it helps the blending process if the avocados are in small chunks and the cilantro is lightly chopped. I also recommend crushing the garlic before putting it in the blender to ensure no one gets a surprise large piece of garlic. 2.Blend until you have a smooth sauce.
