It's not something she serves at the restaurant; it's a recipe she thinks many will appreciate for home cooking. "A few months ago, I wanted to make a pie at my parents' house," she says. "I made the pie dough and chilled it, prepared the filling, and when it came time to assemble and bake the thing, much to my dismay, I discovered my parents did NOT own a pie pan!" She had to improvise at the last minute, and decided to make a big pop tart-style pie by "simply sandwiching the pie filling between two sheets of pie crust, with the edges crimped together with a fork," says Lee. "It came out beautifully," she adds. When Lee originally made the pop tart pie, it was springtime and the filling was strawberry-rhubarb. For the summer, she has adjusted the filling to something more seasonally appropriate: peaches and cherries. It seems the basic recipe can be adapted to a person's tastes as well as the availability of certain fruit. "I've tried ones with blueberry pie filling before too, and they turned out well," she adds.
