Graber - AU19400133 FARMERS MARKET ENCHILADAS By Monica Sinclair With all the fresh veggies out now, you might be wondering how you can use some of them. Luckily, I found a recipe this week that will be perfect to use up some of the garden goodies. For those of you that are vegetarian, you won't need to do anything to this recipe. For those meat eaters, you could easily add ground beef or chicken, and this would still be very delicious. Enjoy! INGREDIENTS • 3 medium zucchini, quartered lengthwise and cut into 1/4-inch pieces • 1 poblano pepper, seeded and chopped • 8 ounces sliced fresh mushrooms • 8 ounces cherry tomatoes • 1 tablespoon olive oil • 1 teaspoon ground cumin • 1/2 teaspoon salt • 1/4 teaspoon cayenne pepper • 2 cups shredded Monterey Jack cheese • 1 cup queso fresco or crumbled feta cheese, di- vided • 1/2 cup minced fresh cilantro, divided • 2 tablespoons lime juice • 14 corn tortillas (6 inches) warmed • 1 can (15 ounces) enchilada sauce DIRECTIONS 1. Preheat oven to 400°. 2. In a large bowl, combine zucchini, poblano, mush- rooms and tomatoes; drizzle with oil and sprinkle with cumin, salt and cayenne. Toss to coat. 3. Divide vegetable mixture between two lightly greased 15x10x1-in. baking pans. Roast 15 min- utes; rotate pans top to bottom. Roast an addition- al 10 minutes or until vegetables are tender. Re- turn to bowl and cool slightly. 4. Stir in Monterey Jack cheese, 1/2 cup queso fres- co, 1/4 cup cilantro and lime juice. 5. Place 1/2 cup vegetable mixture down the center of each tortilla. Roll up and place in a greased 13x9 -in. baking dish, seam side down. Top with enchilada sauce; sprinkle with remaining queso fresco. 6. Bake, uncovered, until heated through and cheese is melted, about 20 minutes. Top with remaining cilantro. Most parents remember a simpler time when T V shows were whole- some, phones were attached to the wall, and social com- munication was conducted by writing notes (oftentimes folded creatively and passed in class.) In those "simpler times," it seems that values were al- so different. Because our children are exposed to so much, both directly and in- directly, it is important to make good use of "teacha- ble moments." Teachable moments hap- pen in the course of life, un- folding more naturally than if we planned a formal, sit- down talk. Teachable mo- ments can be applied to any situation, but one important area of focus is technology. Parents' responses to their teen's use of technolo- gy tend to exist on a spec- trum. There are parents who try to protect their children from as much exposure as they can. They ban their kids from social media sites, restrict and monitor televi- sion and internet usage and maybe even read all of their text messages. This can cause strained relationships between par- ent and teen. On the other end of the spectrum are par- ents who are totally unaware of what their child watches, posts, and texts. This can send the message that par- ents don't care and lead to unwanted behaviors. There is a middle ground, however. Most T V shows have ratings, and most mov- ies are reviewed on websites like IMDb.com. Look for tips and details on why the movie earned the rating. When in doubt, the best way to evaluate appropriate- ness would be to take the time to watch the show by yourself first and then with your teen. Perhaps there is a character who is deciding whether or not to have sex, drink with friends, or skip school. That opens the door for vital discussions with your teen. It doesn't mean a full- blown lecture is required, but it opens a dialogue and provides an opportunity to discuss what your expecta- tions are as a parent as well as tuning in to how your teen is forming opinions about these issues.
