Winslow's Patoka Riv- er is down, but in the fields there are still puddles of water. There is no flooding though. Monday, we woke up with snow covered grass. Before Tuesday, in Winslow, it was almost gone. South of Winslow, like Arthur, they still had snow on the roof tops and the grassy areas. In some parts of Pike, they had two inches of snow. The temps this week were a bit chilly in the 40s and in the high 20s to 30s at night. Then one day, Thursday, it climbed to around 60, but only for one day. Then it dropped to freezing again. Rain is supposed to come over the weekend starting on Friday, and the weather- man is talking of snow again after Spring begins. I'm writing the column on Friday now instead of Sun- day so no weekend news un- til the next week begins. This week has been busy for Norm and I, with meet- ings almost every day but Friday. Monday was Town Hall meeting and the times are changed to the second Monday at 7 p.m. at the Community Center and the 4th Monday at 9 a.m. at the Town Hall. This will give ev- eryone in Winslow a chance to attend the meetings. Tuesday was our first meeting and we got the Winslow Community Festi- val and Light Up Winslow Parade scheduled for Sep- tember 15. If you would like to attend and be a part of our town get together, you are so very welcome to come. Our next meeting is April 10 at 6 p.m. at the Community Cen- ter. Wednesday we had an Auxiliary meeting at Spur- geon-Monroe Fire Station to finalize what we will be do- ing for the Benefit for Don- nie Pancake and discussed our plans for future events. Thursday was the Winslow Lions Club meet- ing, where Norm and I were pinned as lions with Keith Tomas, our Governor offi- ciating. Deby Lamb and Pat Moore pinned us, and we in turn pinned them as spon- sors. Norm and I always help out the Winslow Li- ons Club on all events, and now we can be a part of this fine group of stars working to serve our com- munity and always having fun as we do it together. So far, Friday has no meetings, so we can rest and catch up on all the busy week we have had. There are no meetings at all next week until Saturday, which will be the benefit for Don- nie Pancake on the 24. Tuesday was my 70th birthday, and I got wishes on Facebook and from ma- ny stars around town, and even at several meetings we went to. To all our stars, I thank you for your kind- ness and I did have a great day, and my wishes are com- ing true. Norm made me a cake, his first one, and it came out really fluffy. He can cook and bake items when he wants to. The icing of the cake was done by me. It was his first cake, so the icing stuck to the cake. Terri Ann brought in one with the "Luck of the Irish" on it with green shamrock rings and candles of gold. Both cakes had candles to blow out after making a wish and pictures. I got more flowers and seeds to plant, so my garden spot will have to be a lot bigger this year. Wind chimes and a standing Buddha, cards, a big cup for coffee, ban- ner of spring flowers, hum- mingbird feeders, taken out to eat the week before and wore the Mexican hat and had loads of fun with family and friends. I hope this hap- piness never leaves for this 70th year. Our daffodils are in bloom, and we have a small bouquet of them to enjoy in- side. It looks a lot like spring with more of the trees in buds and leaves and the flowers coming up with all their greenery. March is the windy month, and it has been just that with limbs down everywhere in the yards. The grass is grow- ing with the clumps of new grass, but don't get the mow- er out yet. Those are spots to hide all the Easter eggs in for the hunts coming up. To all the kids out there going to egg hunts, don't be sad if you don't get the big prize, just have a great time as you hunt for all those eggs left by the Easter bun- ny. On March 26, Norm and I will be celebrating our 41 year anniversary as hus- band and wife, so to Norm, I would like to say I love you very much, and I always will. Happy 41st from your Mrs. I guess the lights are about to dim on this week's ramblings, but keep an eye on family and friends, slow down and see all the excit- ing things in your neck of the woods. Always smile, wave and say hi to everyone you see this week. To enter the Birthday Club, email your name, ad- dress, phone number and birthdate to birthdayclub@ pressdispatch.net. Only the person's name, town and birthday will appear in the paper. As an added bonus, one lucky person each month will receive a free three month Press-Dispatch subscrip- tion. Have I also mentioned how much my family and I love bacon? This week, I discovered a fantastic recipe for breakfast or dinner and is topped with none other than magnificent bacon! We will just have to forget the part where it's not healthy. Enjoy! INGREDIENTS 1 Pillsbury Refrigerated Pie Crust 2 cups whole milk 4 large eggs 3 green onions, sliced 1 cup shredded savory cheese (like Gouda or cheddar) 3 slices thick cut bacon, cooked and crumbled 2 cups cooked diced potatoes, drained, or frozen hash browns, thawed and drained 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 10 slices thick cut bacon Maple syrup for brushing DIRECTIONS 1. Preheat the oven to 350ºF. 2. Whisk the eggs, milk, salt and pepper togeth- er in a large mixing bowl. Add the cheese, hash browns, green onions, and crumbled bacon and stir to combine. 3. Lay the pie crust in the bottom of a 9 -inch pie dish. Pour the egg mixture into the pie pan. Bake for 35 -40 minutes or until the quiche is firm enough to lay the bacon on. 4. Remove the pie and increase the temperature to 450ºF. Weave the bacon into a lattice on top of the pie. Brush each strip of bacon with maple syrup. Cover the edges of the pie with aluminum foil to prevent burning. Note: The bacon will shrink a lot, so its fine that the bacon is hanging over the sides. Return the pie to the oven and bake for 10 - 15 minutes or until the bacon is done. 5. Tip pie dish carefully to drain any bacon grease. (If you like extra crispy bacon, you could put the pie under the broiler for a couple of minutes, or until the bacon has reached your preferred done- ness.) 6. Let the pie sit for 5 minutes before serving. "But Mom, just five more minutes! " Do you remember playing outside until dark, hearing your parents call for you to come home and not wanting to go inside? Fast forward 20 years. Does it seem as though your child is always inside watch- ing T V, playing video games or accessing social media on their phone? In the last two decades, childhood outdoor play has decreased while indoor play has increased. This has tak- en a toll mentally and physi- cally on today's youth. Spending less time out- doors has contributed to a rise in childhood obesity and the decline of creativi- ty, concentration and social skills. The National Wildlife Federation states the aver- age American child spends as little as 30 minutes in unstructured outdoor play each day and more than sev- en hours each day in front of a screen, compared to three hours a day in 1995. In our expanding world of technol- ogy, it is extremely difficult for children to get away from electronics. The American Academy of Pediatrics recommends parents monitor screen time for children ages 1-18 and never allow it to replace healthy activities—particu- larly sleep, social interaction and physical activity. Too much screen time af- fects children in the follow- ing ways: • Children who consist- ently spend more than four hours per day on a screen are more likely to be over- weight. • Children who watch vi- olent T V shows or play vio- lent video games are more likely to display aggressive behaviors or fear the world around them. • Children can be in- fluenced by T V and video game characters that often display risky behaviors such as smoking and drinking. So, what are the benefits of dropping technology and heading outside? Evidence demonstrates the many benefits nature has on children's psycholog- ical and physical well-being. Recent studies have shown the necessity of spending time outdoors to reduce stress, increase creativity, and improve physical health and concentration.
