It's a lot cooler in my kitchen. I'm using some good recipes from Spindale's Advent Lutheran Church's cookbook "ADVENTures in Cooking from the North Carolina Foothills". Spinach Biscuits We all know that spinach is good for us. I'm start- ing with BRADY PYERS recipe for Spinach Biscuits. This recipe is very simple and excellent. Just mix together 2/3 cups milk; 1 tablespoon vegetable oil; 1 egg; 3/4 cup fresh chopped spinach; 1/2 cup grated Swiss cheese; 1/4 cup parmesan cheese; 2 tablespoons diced onion; 2 cups Bisquick. Bake in muffin cups just 15 minutes at 400º. Terrific taste and most satisfying. Broccoli Cornbread While I'm concentrating on vegetable baked goods, here is Broccoli Cornbread shared with us in memory of MARTHA CLARK. 1 package broccoli; 2 boxes sweet corn meal; 1 large onion; 2 cups cottage cheese; 4 eggs; 1/2 cup mayonnaise. Stir all togeth- er and bake at 375º for 1 hour. (I used 2 boxes of Jiffy Corn Bread). Believe me, you are going to be surprised and pleased. Zucchini Bread Spiced Just about everyone loves Zucchini Bread. Here's a different twist on this popular item. ANN CALLAHAN shares her recipe for Spiced Zucchini Bread. 3 cups all-purpose flour; 2 teaspoons soda; 1 teaspoon salt; 1/2 teaspoon baking powder; 1 1/2 teaspoons cinnamon; 3/4 cups finely chopped walnuts; 3 eggs; 2 cups sugar; 1 cup vegetable oil; 2 tea- spoons vanilla;2 cups coarsely chopped shredded zucchini; 1 can crushed pineapple well drained. (Tip: I found that using paper towel will really get it drained well). Combine flour, soda, salt, bak- ing powder; cinnamon and nuts; set aside. Beat eggs slightly in large mixing bowl. Add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients stirring only until dry ingredients are moistened. Spoon batter into 2 well greased and floured 9 x 5 x 3 inch loaf pans. Bake at 350º for one hour or until done. Cool for 10 minutes before removing from pans; turn out on rack and cool completely.
