BUSINESS OP- OPPORTUNITIES BUSINESS CABBAGE & POTATOES To save some time, I’m going to make BRENDA WHITE’S crock pot CABBAGE & POTATOES. 1 stick of butter, 4 large potatoes sliced thin, 1 small cabbage chopped, 1 large onion chopped, salt and pepper to taste. That’s it! (Option: I some- times add those tiny small carrots - it adds color). Melt butter in bottom of crock-pot. Add vegetables; potatoes on bottom, then cabbage in the middle, then (baby carrots) & onions on top. Salt and pepper to your taste. I also add a quarter cup of water. Cook on high for 3 to 4 hours, check and then cook for one more hour until vegetables are done to your liking. I’ll be serving the Corned Beef Brisket, sliced on top of this with the juices from the corned beef. Some of the best cooks in the world are right here in Rutherford County! The dry rub and time you marinate it depends on the weight of the brisket. So, be sure to know how many pounds the brisket weighs. For each pound add 1 1/2 tablespoons of the dry mixture and rub it with vigor on both sides. When this is done you will place the meat in a glass container or plastic bag. Place in refrigerator and turn each day depending on the weight. Refrigerate one day for each pound and don’t forget to turn. When it’s time to cook it, drain off the liquid before cooking, but do not wash off the meat marinate. Place in a suitable cooking container and cover with water. (Option: I add a can of beer and water). Bring to a boil and skim off the scum that gathers on top of the water. Then, reduce the heat and simmer until done. (Time depends on weight of the brisket). All you need to know now is the dry rub recipe: 2/3 cup sugar, 1 cup salt, 2 tablespoons pepper, some bay leaves, and cloves. You will add 1 1/2 tablespoons for each pound of brisket.
