FAVORITE PEANUT BUTTER AND JELLY SWEET POTATO TAQUITOS Visit HealthyFamilyProject.com to find more recipe inspiration. 1 cup sweetpotatoes, peeled and diced small nonstick olive oil spray 1/2 cup peanut butter, preferred nut butter or nut-free butter 8 small, low-carb flour tortillas 1 cup blueberries, washed and dried 1 cup raspberries, washed and dried Preheat air fryer to 400 F. Add diced sweetpotatoes to air fryer basket and lightly spray with olive oil spray. Cook sweetpotatoes 10 min- utes, shaking basket 1-2 times to toss sweetpotatoes. Transfer cooked sweetpotatoes to medium bowl; add peanut butter and mix well. Lay tortillas on counter and place 1-2 tablespoons sweetpotato mixture on each tortilla. Add blueberries and raspberries next to sweetpotato mixture. Roll each tortilla tightly. Place rolled tortillas, seam sides down, in air fryer. Spray tortillas lightly with olive oil spray. Lemon Honey Vinaigrette: 6 tablespoons olive oil 1/4 cup lemon juice 2 tablespoons Dijon mustard 2 1/2 tablespoons honey salt, to taste pepper, to taste 3 medium sweetpotatoes, peeled and sliced 2 tablespoons olive oil salt, to taste pepper, to taste 4 cups spring salad mix 1 cup fresh blueberries 1/3 cup chopped walnuts 1/4 cup blue cheese crumbles lemon wedges, for garnish (optional) Lemon honey vinaigrette: mix olive oil, lemon juice, Dijon mustard and honey. Season with salt and pepper, to taste. Refrigerate until ready to serve. Preheat grill to medium heat. Drizzle sweetpotatoes with olive oil and season with salt and pepper, to taste. Grill sweetpotatoes on each side about 5 minutes, or until tender and slightly charred. Remove from grill and let cool. To arrange salad, spread spring salad mix onto platter, top with grilled sweetpotatoes, blueberries, walnuts and blue cheese crumbles. Top with lemon honey vinaigrette and garnish with lemon wedges, if desired. Waylon Conley, 11, and Hannah Conley, 10, are shown at the Mountain State Fair where she showed sheep on Sept. 9 and Sept. 10. The siblings both competed in the junior division of showmanship competition on Saturday. Hannah placed eighth and Waylon placed 12th out of 32 in their division. On Sunday Hanna also showed two ewes in the commercial breeding ewe show on Sunday. Her lamb Barbara Ann placed fi fth in class and Kokomo placed second. Prize winning ewes The Celebration of the Arts is a free art show beginning Friday, September 22 - Wednesday, September 27. It is located at the Foundation on the Campus of Isothermal Community College located in Spindale. The show hours are September 22-26, 9am- 5pm except Sunday September 24, 1-5 pm. September 27, 9am-noon. The show features 2D and 3D art by 48 local and regional artists, a gift shop, an ICC Student display and a Junior Artists Display. Art pieces include paintings, photography, pottery, jewelry, wood, metal, glass, fi ber, mixed media and more. Over 150 art pieces will be on display. The show is a project of the Rutherford County Visual Artist Guild (RCVAG,) with sponsors Stonecutter Foundation and the NC Council of the Arts. RCVAG docents and other volunteers will be on hand to answer questions and help for those who want purchase of one-of-a- kind art work.
