SLOW-COOKED SPICY GOULASH MEALS IN Monica's MINUTES By Monica Sinclair I remember my mom making goulash when I was younger. It was a quick, easy, inexpensive way to feed our family of five. It's something I've not made as an adult and I am not sure why, as I always loved eating it. This week, I found a recipe for spicy goulash that I will be adding to the list of recipes to make. Although there are more ingredients than usual, most people will have a lot of these already in their pantry. Enjoy! INGREDIENTS • 1 pound lean ground beef (90 % lean) • 4 cans (14-1/2 ounces each) Mexican diced tomatoes, undrained • 2 cans (16 ounces each) kidney beans, rinsed and drained • 2 cups water • 1 medium onion, chopped • 1 medium green pep- per, chopped • 1/4 cup red wine vin- egar • 2 tablespoons chili pow- der • 1 tablespoon Worces- tershire sauce • 2 teaspoons beef bouil- lon granules • 1 teaspoon dried basil • 1 teaspoon dried pars- ley flakes • 1 teaspoon ground cumin • 1/4 teaspoon pepper • 2 cups uncooked elbow macaroni DIRECTIONS 1. In a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. 2. Transfer to a 5 -qt. slow cooker. Stir in the tomatoes, beans, water, onion, green pepper, vinegar, chili pow- der, Worcestershire sauce, bouillon and seasonings. Cover and cook on low for 5 -6 hours or until heat- ed through. 3. Stir in macaroni; cover and cook 30 minutes longer or until macaroni is tender. Source: tasteof home.com YOUTH FIRST TODAY Rewarding positive behaviors By Diane Braun Project Manager Youth First, Inc. Most children crave attention, not only from their peers, but also from the adults in their lives. They will search for ways to be in the spotlight, whether positive or negative, in order to get a reaction from those around them. Parents should always strive to focus on the positive behaviors they see in their children and reward those behaviors. How to reward them is often a matter of debate. Should it involve an allowance, a shopping spree, or another costly ac- tivity? Not necessarily. For most small children, simple and free gestures are ex- actly the kind of attention that will make them feel acknowledged and loved. Personal rewards can involve hugs, winks, high fives, praise and applause. Rewards involving fun activities could in- clude a ride in a wagon, spending time popping balloons or paper bags, pig- gy-back rides, blowing bubbles togeth- er, or playing dress up in funny clothes. Making an effort to spend quality time with children can make them feel special and acknowledged as well. Simple bond- ing experiences can include pushing a child in a swing, delaying bedtime by an extra 15 minutes, reading a book aloud, or allowing your child to help you make a meal or hold the T V remote. These ac- tion-based rewards involving time spent together can help cultivate positive feel- ings of belonging. Rewards that involve a small cost and can easily be purchased at a dollar store can be hair clips and ribbons, stickers, coloring books, marbles, comics, paints and brushes, chalk, markers and cray- ons, or balloons. Rewards like these are easy to keep hidden around the house so you can present a reward to your child when they exhibit positive behavior. The most important thing to remem- ber is that good behavior should be rein- forced right away. Make eye contact and tell the child exactly what you liked. "You did a great job putting the dishes away! " Be enthusiastic and genuine. If working towards a behavior goal, be sure to acknowledge each step as it is accomplished. When the end goal is reached, that is the time for a more an- ticipated reward like 15 more minutes of screen time. Use of behavior charts is also a good way to show progress toward a goal. In- corporating a particularly enticing re- ward into the last step on the chart is a sure way to motivate your child to com- plete the chart. Anticipate inevitable set- backs and encourage your child to keep working towards their goal when they are feeling discouraged. Once a behavior becomes a habit, re- wards can be decreased and new goals can be set. Parents can be more aware of their children's attitudes and behaviors by asking them what rewards they'd look forward to and using them to encourage new positive behaviors. Learning to be conscious of when and why you give re- wards is a wonderful and productive way to show your children the love and affec- tion they deserve.
