Rutherford Weekly's Favorite with M.A. ANDREWS With the holidays upon us, I'll try to share with you some interesting and tasty recipes. Perhaps something a little out of the ordinary to set on your holiday tables. This week I'm taking off the shelf "Mama's Mountain Cooking" by our local celebrity cooking expert, Joy Oakley Gillespie. Her cookbook, now in its third printing, is a 296 page treasure of all good things to eat. Corn Cheese Pie ANNOUNCES... Youth A $20 fee is due when registering. Corn Cheese Pie will delight anyone who your serve it to and the compliments come with it. This recipe you must try. 1 9-inch unbaked pie shell (deep dish); 1 tablespoon butter; 1 cup grated cheese, divided; 1/2 pound bacon, fried; 1 cup chopped onion; 2 eggs, beaten; 1 can cream style corn; 2/3 cup evaporated milk. Rub butter over bottom and sides of pie shell. Saute onion in small amount of bacon drippings. Reserve 5 slices of bacon for garnish and crumble the rest into the onion. Spread this mixture over the bottom of pie shell. Sprinkle over this 1/2 cup grated cheese. Heat milk, add eggs and rest of cheese. Pour into pie shell. Bake at 450 degrees for 10 minutes. Reduce heat to 325 degrees and continue baking fort 25 minutes. A hearty pie that you will bake again and again. Green Tomato Pie Basketball Registration For Boys And Girls Ages 4 To 15 Will Be Going On Through The Month of November From mama's good friend EDNA WHITENER I'm going to make a Green Tomato Pie. 1 9-inch deep dish pie crust; green tomatoes; 1 cup chopped celery; 1 cup chopped onions; 1 cup sharp ched- dar cheese; 3/4 cup mayonnaise. Bake pie crust for 5 to 10 minutes. Line bottom of crust with thinly sliced green tomatoes. Sprinkle with celery and onions. Mix cheese and mayonnaise. Spread over vegetables. Bake at 350º until cheese melts and mayonnaise is puffed and golden. Yet another pie that you'll be proud to serve. A good friend, ALLISON MILLS shares her recipe for The Best Holiday Dressing. This, my friends, is a keeper. 1 pound hot sausage, browned and drained; 1/2 pound ground ham; 4 to 5 cups corn- bread; 1 package Pepperidge Farm seasoning mix; 1 box seasoned croutons, soaked in chicken broth; 2 sticks melted butter; 1/2 cup fresh parsley; 3 well beaten eggs; 1/2 cup cream; 1 teaspoon salt; 1 teaspoon thyme; 1 teaspoon pepper; 1 teaspoon oregano; 1 to 2 cups pecans, chopped; 2 cups chopped celery; 2 large onions, chopped. Cook celery and onions in small amount of water over low heat. Add remaining ingredients to mixture and adjust seasoning to taste. (If not cooked in the bird add more liquid). Bake at 350 degrees to 30 to 40 minutes. The Best Holiday Dressing That's it as we begin November. Remember, my motto, "Get in the kitchen and show the love!"
