In large bowl, mix grapefruit juice, oil, garlic powder, cumin, paprika and red pepper until combined. Add chicken to bowl and turn to coat. Refrigerate 30 min- utes or longer. Drain bacon over paper towel; allow to dry. Crush into pieces. In large bowl, stir chicken, mayonnaise, green onions and pepper until combined. Add bacon and tomatoes; stir until combined. Cut croissants in half. Spoon generous portion of chicken salad over bottom croissant. Top with sprouts. Replace top croissant. In large skillet, add water and asparagus. Cook 5-8 minutes until asparagus is bright green. Drain asparagus and soak in ice water. In large bowl, mix drained asparagus, vegetable oil, salt and pepper until combined. Flour surface area. Using rolling pin, roll out pastry to 10-by-16-inch rectangle. Transfer pastry to parchment- lined baking sheet. Prick pastry with fork. Bake about 12 minutes, or until golden brown. Cool slightly on baking sheet. In large bowl, mix fontina cheese, gruyere cheese, shallot, egg yolks, milk, nutmeg and salt and pepper, to taste, until combined. Spread cheese over pastry, leav- ing 1 inch around edges. Lay asparagus over cheese mixture. Bake 5 minutes, or until cheese has melted. Sprinkle lemon zest over tart and serve. PEANUT BUTTER BANANA BREAD 2 cups just add water pancake mix 1 cup mashed banana ¼ cup peanut butter 1 banana, sliced Preheat oven to 325°F. Whisk pancake mix and 1 cup water. Stir in banana and peanut butter until combined. Pour into lightly greased loaf pan and top with banana. Bake 20 minutes. The stand up comedy show featured some of Alabama's fi nest comedians, including Carson Elmore, Chase Mote, Vince Fabra and Chris Davis. A.J. is the son of Peter O'Leary and Ann O'Leary of Chimney Rock Village. When not doing stand up comedy, O'Leary spends his time as the Finance and Legal Reporter at the Birmingham Business Journal.
