OKRA FRITTERS Lydia Jane Edwards ½ lb. okra, sliced 1 med/ onion, chopped 1 tomato, chopped 1 egg ½ cup flour ½ cup corn meal Mix all ingredients together. Spoon into hot grease. RITZ CRACKER PIE Peggy Ramey 20 Ritz crackers ¾ cup sugar 1 tsp. vanilla 3 egg whites ½ cup nuts Crush crackers with rolling pin; add ½ of the sugar and all the nuts. Beat 3 egg whites until stiff; add 1 teaspoon vanilla and the remaining sugar. Mix all ingredi- ents. Fold in the cracker mixture- do not use mixer. Grease pie pan with butter, shape mixture into crust. Bake at 350 degrees for 20 minutes. Cool. FILLING: Whip ½ pint cream, pour into crust and sprinkle coconut on top.
