PINEAPPLE SHRIMP TACOS MEALS IN Monica's MINUTES By Monica Sinclair Happy New Year! Welcome to 2021. Here's hoping it's a much better year than last year. Have you made any res- olutions or are you simply happy to be in another year? Personally, I need to lose weight again. My son is getting married in a few weeks and I want to lose some weight for that. I have packed on some of the pounds I lost a few years ago. So, to start out the year, I will begin with a fairly healthy recipe to help kick start those diets. Enjoy! INGREDIENTS • 1 pound uncooked large shrimp, peeled and dev- eined • 3 teaspoons olive oil, divided • 1 large, sweet orange pepper, sliced • 1 large, sweet red pepper, sliced • 1 small onion, halved and sliced • 1 cup pineapple tidbits • 1 envelope fajita seasoning mix • 1/3 cup water • 8 corn tortillas (6 inches), warmed • 1/2 cup shredded Cotija or mozzarella cheese • 8 large romaine lettuce leaves DIRECTIONS 1. Cook shrimp in 2 teaspoons oil in a large cast-iron or other heavy skillet over medium heat until shrimp turn pink, 4-6 minutes. Remove and keep warm. 2. In the same skillet, sauté the peppers, onion and pine- apple in remaining oil until vegetables are tender. 3. Add seasoning mix and water. Bring to a boil; cook and stir for 2 minutes. 4. Return shrimp to the skillet, heat through. Spoon on- to tortillas; top with cheese. Wrap lettuce around tor- tillas to serve. Source: tasteof home.com YOUTH FIRST TODAY By Niki Walls, Youth First, Inc. Parents and guardians are always searching for answers to questions about raising children in today's world. While developments in technology and popu- lar culture have changed many aspects of childhood over time, one thing that has not changed is that our children need love from a caring adult more than anything. Showing love and affection to kids can sometimes seem "easier said than do- ne." However, love is essential because it enables children to flourish and discov- er who they are. Love is a word that en- compasses many different things as well. Love does not come without consistency, respect, and support. Children thrive on consistency. They may seem like they hate rules and are re- sistant to many of the boundaries adults set for them, but in actuality, structure is something they are in dire need of. Con- sistency can come in many forms; de- veloping routines, having the same dis- cipline techniques as your spouse, and having consistent schedules. Children generally do not embrace sud- den change, so by creating consistency in their lives, you are likely to prevent power struggles and behavioral outbursts. Your children will come to know your expec- tations and follow them more thorough- ly because they will know what the out- come will be if they do not. In turn, this sets the stage for respect. By giving your kids love and consistency, you are being respectful of your children and meeting them at their level. Children are more likely to respect the adults they feel respected by. Start with trying to understand and val- idate their feelings when an issue aris- es. Take yourself back to when you were their age and remember how this partic- ular issue would have made you feel. The more give and take there is in the conver- sation, the more your child will respect you and feel open with you. Support is another aspect that is en- compassed under love as well. Children often look to someone who will recognize and praise them for their accomplish- ments. Do not blow off or joke around about something that they are proud of. Encourage your children's natural pas- sions and interests; do not push yours on them. Be an ear if they need some- one to talk to and guide them as they ac- tively seek advice. Children generally let you know if you have overstepped your bounds; pay attention to them. If you start with love, you are likely to naturally encompass all of the rest of the suggestions on your own. Take the time to really get to know your kid to the core, not just the surface level version of them. Learn from your past parenting mistakes and the mistakes your parents made rais- ing you.
