This week a proud Grandmother, Jennine Watts, sent me a story and picture. Trevor Watts is Jennine's grandson, he is from Forest City and he took up fi shing this year. He and his dad go every chance they get. Trevor got him this nice looking Catfi sh at a local pond in Forest City. I've never thought about it until now, but when I look at my past, I can't tell my story without talking about trees. I was reminded of their infl uence just the other day, as I admired a beauti- ful Weeping Willow. As far as trees go, this one is my fi rst memory. It was from this tree that my dad gathered the switches he would use on my legs. I never felt abused by their sting, but I can't re- ally say I felt loved either. LOL. I can remember how quick it took to de-leave a small branch in order to make it a cor- rection tool for my dad. I can't remember anything I ever did to deserve such torture, only that it must have been pretty bad. My only memory of that Weeping Willow was one of pain. But that was not the only tree that brings back memories. There was a Maple just beyond that willow tree that was for climbing. In the center of the yard, there was an apple tree below an old cesspool that would remind you of an old man who had just enough hair to keep from claiming he was bald. The apples were sparce, but the hole in the trunk always provided some of the richest dirt for any plant that needed a boost. These were part of my home and part of my life. A later memory was one of ac- complishment. Dad brought home two trees for my brother and I to plant. Mine was a Mimosa. I can remember plant- ing it and it growing into an adult. I always looked at that tree as something I helped survive and thrive. Later, as a young adult, I learned the difference between oaks, hicko- ries, sassafras, and most others. And isn't it special, as a deer hunter, I will sit in a tree to have an opportunity to harvest a trophy and re-live a story. Yes, it's true. I can't tell the story of my life without talking about trees. They truly are a special creation of God. One writer of scripture described a characteristic of trees this way. He said, "Let the trees of the forest rustle with praise." If you have ever been in a tree stand you know what he is talking about. The sound of leaves at the end of limbs lifted in praise, affi rms the truth that if we humans do not give thanks to God, the rocks will cry out. (and the trees will too.) Worcestershire sauce Dash Tabasco 1 tsp. red cayenne pepper 3 Tbsp horseradish or to taste 1 Tbsp. lemon juice Mix all ingredients together. Refrigerate for a few hours before serving. If you don't enjoy food h ot and spicy, reduce the amount of pepper and horseradish. BROCCOLI SALAD Jenny Rikard 1 head broccoli 1 jar Real bacon bits Chopped red onion 1 to ½ cup grated cheese ½ cup Miracle Whip ¼ c. sugar 2 tsp. red wine vinegar Layer salad ingredients Mix up dressing. Add dressing to salad and mix just before serving. SALMON LOAF Pat Boyles 1 can salmon ½ cup cracker crumbs 1 egg ¼ cup cream 1 small onion Mix and mold into oval dish. Bake until slightly brown and garnish with pickles and serve hot. LASAGNA Carolyn Crawley 1 large pk. Ground chuck or beef 1 can tomatoes, drained 1 can tomato paste 1 can tomato sauce 1 pkg. spaghetti sauce mix, 1 tsp. oregano, 1 tsp. salt Pepper to taste Let simmer 15-20 minutes. Cook lasagna noodles 12 minute and then drain. In a casserole bowl, put a layer of sauce, then a layer of noodles, then Mozzarella cheese. Re- peat until full. Top with sauce. Bake in pre-heated oven 20 minutes at 350 degrees. MELT IN YOUR MOUTH CHICKEN PIE 1 fryer or 1 pkg. chicken breasts 2 cups chicken broth 1 can cream of chicken soup 1 cup self-rising flour 1 cup buttermilk 1 stick margarine Cook the fryer or chicken breasts and chop. Place in 9x13 pan. Heat the chicken broth and chicken soup, pour over chicken. Mix together the flour, buttermilk and mar- garine. Pour over top and bake at 450 degrees for 30 minutes. (Ed.
