We all know someone in our area; plus those who are suffering with the virus that is traveling around, and then those with the everyday aches and pains. EVENTS January 3 – Winslow Lions Club will meet at 7 p.m. at the Community Cen- ter. January 6 – Spurgeon Monroe Fire Department will meet from 2-3 p.m. with training from 3-5p.m. January 8 – Winslow Beautification Committee will meet at 6:30 p.m. and the Winslow Economic Committee will meet at 7:30 p.m. Both meetings will be at the Community Center. January 14 – Winslow Town Hall will meet at 7 p.m. at the Community Cen- ter with a new Town Council and ev- eryone is welcomed to come and see what our town council does first hand. Winslow Seniors will meet on Mondays and Tues- days at the Community Cen- ter. Petersburg Seniors will meet on Mondays, Tuesdays, Wednesdays, and Fridays at the Courthouse Basement. Postcards this week at Sweets Column Winslow, IN 47598 were none in the old mail box. Winslow Patoka River has gone down a little, not in the River- side Park, but with the rain we had it may rise again. The Christmas deco- rations in yards all over Pike County look great and soon it all will be tak- en down and stored until December of 2019. As I have learned, that when you see all this beauty it will soon be just a plain yard again until the next holi- day comes. My thinking on the many wet yards, is that you have to find an easier way to get from Point A to Point B, or wait for that frozen walkway, but not the ice or snow. Last Saturday, December 22, was the Virden Christmas and Bingo where the 11 of us met at George and Deby and Mom's house where we all brought in some delicious food and deserts. I had brought a cobbler but we all got too full and then started playing Bin- go for extra (little something's) pres- ents. The grandkids, Kyana and Jaca- ri, enjoyed their chairs which were fit- ness balls. Mom, George, Deby, Ter- ri Ann, Ted, Josh, Kelly, Jacari, Laura, Kyana and I all had the greatest day together as we laughed and laughed again. Norm couldn't make it because he had the virus that was around our area. Our Bingo gifts are $1 or less and that brings in a lot of prizes to choose from. I rode over there with Laura and Kyana and on the old road we saw sev- eral yards with sleighs and snowmans and the city squares were amazing. Then on our way back I rode with Terri Ann and Ted, and we saw quite a few houses in lights and the Town Squares we drove all around the square. The Little Wabash was over its banks and lots of fields had lakes in them. The whole day was wonder- ful with sunshine, comfortable temps, starry nights, and a bright moon. Christmas Day I made Norm some breakfast of oats and butter bread with coffee and just hung out at the Cabin. We walked out the doors later on and Janie was standing there to wish us a Merry Christmas and bring by some really delicious sugar cookies of bells, cross, flower, heart with red or green sprin- kles. Janie said these were made from her grandma's recipe. It's a great cook- ie that we enjoyed. Thanks. Wednesday Norm and I drove out to our wood guy where we saw Gordon Barnett. His year was not too great, but he is mending now. We loaded the truck up with some fine chunks or slabs and when we got home we de- cided not to drive into the yard, and get stuck, so we unloaded the wood in- to a wheelbarrow. If you would like to know how many trips was made, it was 18 trips but well worth the exercise. Kids are out for the Christmas break and go back on January 2, so we hope you all had a fun time with family and what Santa brought you was what you needed. It was great to see Kyana and how she had grown up. Right now as I write, the New Year of 2019 hasn't began but I hope you all had a great and fun time as you rang in the New Year. Did you eat your cab- bage and black-eyed peas? I just remembered something else I saw while traveling the Interstates 69, 64, and 57, they all were manicured or mowed and they all three look like they should be, pretty roads to ride on and see that lovely scenery along the way. As the lights begin to dim on this week's ramblings, please keep an eye on family and friends; slow down, and enjoy all your surroundings; hope your resolutions made for this year were some you can work on all year long and have fun with what you do; then as always smile, wave, and say Hi to everyone you see this week. Hopefully you had a safe celebration and are thinking ahead to what the new year may bring. I have tried every year to make a resolution to lose weight and failed miserably, so this year I am trying a different kind of resolution. Let's see if I can stick to this one. Howev- er, one thing I know that I can stick to is finding delicious recipes to share with everyone. Since I love sweet potatoes, this recipe I found in my email will be perfect. It's a different way to eat them and who can resist pancakes? Enjoy! INGREDIENTS CINNAMON TOPPING: • 1 package (8 ounces) cream cheese, softened • 1/4 cup packed brown sugar • 1/2 teaspoon ground cinnamon • 1/2 cup sour cream PANCAKES: • 6 large eggs • 3/4 cup all-purpose flour • 1/2 teaspoon ground nutmeg • 1/2 teaspoon salt • 1/4 teaspoon pepper • 6 cups shredded peeled sweet potatoes (about 3 large) • 3 cups shredded peeled apples (about 3 large) • 1/3 cup grated onion • 1/2 cup canola oil DIRECTIONS 1. In a small bowl, beat the cream cheese, brown sugar and cinnamon until blended; beat in sour cream. Set aside. 2. In a large bowl, whisk the eggs, flour, nutmeg, salt and pepper. Add the sweet potatoes, apples and onion; toss to coat. 3. In a large nonstick skillet, heat 2 tablespoons oil over me- dium heat. Working in batches, drop sweet potato mix- ture by 1/3 cupfuls into oil; press slightly to flatten. Fry for 2-3 minutes on each side until golden brown, using remaining oil as needed. Drain on paper towels. Serve with cinnamon topping.
