This week I'm going to make some main dishes. We are still grilling and I'm starting off with a good grilling recipe. KRISTY COOPER shares her Grilled Mustard Chicken with us. I was surprised how good it is. It's heart healthy and also a great make ahead recipe. 4-6 boneless, skinless chicken breasts; 1 cup lemon juice; 1 cup water; 1 stick butter; 4 tablespoons cider vinegar; 12 tablespoons Worcestershire sauce; 16 tablespoons mustard. Mix all ingredi- ents, except for the chicken, in a saucepan over medium heat. Cook only until well blended. Punch chicken several times with a sharp knife so that the sauce will be able to soak into the meat. Wash chicken and remove and gristle or fat. Place the chicken in a dish and pour sauce over chicken, reserving enough to brush on chicken as and when you grill. Refrigerate at least 30-45 minutes and then grill. Very tasty. Grilled Mustard Chicken Oven Baked Chicken Parmesan I'm back in the kitchen and am ready to make BARBARA HAMRICK'S Oven Baked Chicken Parmesan. 4 boneless chicken breast; 1 egg; 1 jar Ragu old world style pasta sauce; 3/4 cup Italian seasoned dry bread crumbs; 1 cup shredded moz- zarella cheese. Preheat oven to 400º. Slightly beat egg. Dip chicken in egg and then bread crumbs, coating well. In a 13" x 9" glass baking dish, arrange chicken. Bake uncovered 20 minutes. Pour Ragu over chicken then top with cheese. Bake an additional 10 minutes or until chicken is done. Taco Pizza How about a Taco Pizza. This is from FRANCES MORROW. Everyone loves it so you better make two! 1 pound lean ground beef; 1 10 3/4 ounce Taco Bell Home Originals Taco Dinner; 1 package pizza crust 12 inch; 1 package Kraft Mexican Style Shredded cheese; 1 cup shredded lettuce; 1 large tomato. Preheat oven to 400º. Chop tomato. Prepare pizza crust by instructions. Cook meat with seasoning mix following package directions. Spread evenly onto pizza crust. Sprinkle with cheese. Bake 8 to 10 minutes or until crust is golden brown and cheese is melted. Top with lettuce and tomatoes. Crush taco shells and sprinkle over pizza. Drizzle with taco sauce.
