VACATIONS Rutherford Weekly's Favorite with M.A. ANDREWS This week, I'm going to make some main dishes. You can feed the family or company with these and feel good about going to the kitchen and showing some love. I've got Gray's Creek Baptist Church's cookbook entitled "Homemade With Love" and in the kitchen I go to make some very tasty main dishes. I'm going to start with MYRA DOWNEY'S Chicken Casserole. 1 chicken stewed and deboned; 1 can cream of chicken soup; 1package Pepperidge farm stuffing; 1/2 can evaporated milk; 1 can cream of celery soup; 3 cups chicken broth (from stewing the chicken - just strain and use). Mix chicken soup, celery soup and milk all together. Put cut up pieces of chicken in baking dish. Pour 1/2 soup mixture over chicken. Mix stuffing with the rest of soup mix. Put on top of chicken. Pour broth over stuffing. Bake at 400º for 20 minutes or so. This dish is very good and I like it better after it sits awhile and then reheated. Chicken Casserole Chicken Pot Pie An all time favorite is a good Chicken Pot Pie. Here is LINDA BYERS recipe. You just can't go wrong with this great dish. 3 pounds chicken; 1 16-ounce can Veg-All; 2 1/2 cups chicken broth; 1 can cream of chicken soup; 1 stick of butter; 1 cup and 2 table- spoons self-rising flour; 1 cup sweet milk. Preheat your oven to 400º to 425º. Stew chicken. Remove from bone and cut into pieces. Place chicken in bot- tom of casserole dish. Drain vegetables and spread over the chicken and vegetables. Mix together melted butter, self-rising flour and milk. Pour over chicken mixture and bake until brown - about 30 minutes at 425º. Let rest about 10 to 15 minutes before serving. P.S. Don't forget to save the chicken broth from stewing the chicken. Salmon Patties I don't know about you, but I love good salmon patties. I also prefer those that are not overwhelmed with bread crumbs. I like some tasty salmon. I'm going to make some Salmon Patties from HEATHER WOMICK'S recipe. A simple recipe that's really good. Tip: Rather than fry my patties in a pan, I bake them at 425º with just some vegetable spray. I usually turn then once. 1 can salmon; 1 onion; 1/2 lemon juice; 2 teaspoons dill; 1/2 cup bread crumbs; 1 egg and oil or butter if you are going to fry. . . veg- etable spray for the oven. I serve them on a plate or sometimes put them in a hamburger bun with cole slaw or a slice of tomato. Anyway you like them, the ham- burger bun is the answer for a picnic or outdoors.
