Something simple, easy to make and just great. This recipe is from Big Springs Baptist Church’s “Pleasure Of The Good Earth” cookbook. Sirloin Tip Roast It is time tested and an answer to your request. CAROL MC NEILLY gives it to us. 1 large sirloin tip roast; 1 package Lipton Onion Soup mix; 1 can cream of mushroom soup; 1/2 cup water; salt to taste; black pepper to taste. Preheat oven to 350º. Wash the roast and pat dry. Rub roast with salt and pepper, place in large casserole dish, sprinkle onion mix over top of roast. In a cup container mix water and canned soup, pour over roast. Cook at 350º for 20 minutes per pound, no longer or you will dry out the roast. You might want to do it a little less if you want a medium rare roast. I hope this satisfies your request. I added some potatoes and carrots to my roasting pan after I tossed them in a little olive oil. It worked out very well. Steak Marinade This is definitely grilling time. A good marinade can make it even better. ROSE BEVINGTON offer a very good Steak Marinade. I like it because it doesn’t over- whelm you with soy sauce. So many recipes and com- mercial marinades are loaded with soy sauce which is very high in sodium. This recipe is very well balanced. 1/2 cup soy sauce; 4 tablespoons minced onions; 2 cloves garlic crushed; 1 tablespoon fresh ginger root; 1/4 cup dry white wine or rice wine; 4 small steaks; cherry tomatoes for garnish. Mix the first five ingredients, pour over steaks in a plastic zip bag. Place in refrigerator for a minimum of three hours. (I prefer overnight); Broil or grill and baste your steaks with the marinade. When almost done grill the tomatoes for a good garnish. I usually double this recipe. I also use it for stew meat that I slow cook. Really tasty! Steak and Gravy I’m now going to make tonight’s dinner. Everyone loves a great Steak and Gravy dish. Here is DONNA BAILEY’S recipe that is sure to please. 3 pounds cubed steak; 1 can golden mushroom soup; 1 package onion soup mix; flour and oil. Heat oil in the pan and roll the steak in flour. Brown on both sides then put in a larger pan or casserole dish with lid. Mix onion soup with water as directed on package. Mix in mushroom soup. If this is not enough add water to cover the steak. Bake at 350º for 1 hour. This will make a thick gravy. Make sure you cover your baking dish. Tip: I wet my steaks before I flour them. It helps the flour stick. That’s it for this week.
