Place crushed strawberries in a large saucepan with water and Sure-Jell. Bring to a hard boil (one that can’t be stirred down) for 1 minute, stirring con- stantly. Remove from heat and add Splenda; stir to mix well. Skim off foam and then ladle into clean jars and then cover with lids tightly. Allow cooling at room temperature for 24 hours. Refrigerate - Makes 2 pints. Note: If you don’t want to store in refrigerator, then you need to do a hot water bath for 10 minutes. HOT MILK CAKE 2 large eggs, room temperature 1 cup sugar 1-1/2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 3/4 cup milk 1/2 cup butter 1 teaspoon vanilla Heat oven to 350º. Grease and flour 8x8 inch baking dish. Beat eggs and sugar about 3 minutes on high speed of mixer. In a separate bowl, whisk togeth- er flour, baking powder and salt. Slowly add flour mixture to egg mixture and beat on medium speed until barely mixed (mix- ture will be thick). In a small saucepan heat milk and butter just until butter melts. Add vanilla and then pour hot milk into cake mixture. Mix well scraping down the sides of the bowl several times. Pour into prepared cake pan and bake 30 to 35 minutes until tests done in center. Allow cooling for about 30 minutes and then sprinkle with powdered sugar. Serve warm or room tem- perature with fresh fruit. BUTTERMILK CHEESE BISCUITS 3 cups all-purpose flour 4 teaspoons baking powder 1/2 teaspoon baking soda 1-1/2 teaspoons salt 6 tablespoons Crisco shortening 2-1/4 cups buttermilk 4 ounces sharp cheddar cheese, shredded 1 cup shredded Parmesan cheese 3 tablespoons melted butter Heat oven to 475º. Grease a large baking sheet with butter or Crisco. In a large bowl, whisk togeth- er flour, baking powder, baking soda, and salt. With a pastry cut- ter, cut shortening into flour mix- ture and then add buttermilk. Stir just until blended; add cheese and work together until mixed. Turn out onto floured board and shape into a round about 1/2 inch thick. Cut biscuits and then place on a large greased baking sheet. Brush tops with melted butter. Bake about 14 minutes until nice and browned on top. Makes about 20 biscuits.
