Bed & Barn Farms will be hosting a Chamber of Commerce Business After Hours at their farm and bed and breakfast location at 661 Big Island Road, Forest City, on May 5 from 5:30pm-7pm. Owner Tammy Martell will have BBQ, hay rides, trail tours, and a silent auction in her facility that can house both horses and their owners that are travelling through the country. Bed & Barn Farms is a unique concept for travelers with horses. Facility can accommodate horses and their owners. This saves the owners several hours of time by having boarding for horses and themselves in the same location. Instead of having to take the horses out of the trailer, exercise them, wash them down and put them to bed, and then travel to a separate place for themselves to stay, people traveling with horses can now relax in a fi rst class two bedroom apartment, while their horses can relax on 30 acres and in stables on the property. Apples are one of our favorite fruits so I’m going to start with GLENN ABRAMS version of Apple Cobbler. 3-4 cups apples, peeled and thinly sliced; 2 tablespoons sugar; 5-6 slices bread. Put apples in a 1 1/2 quart casserole dish. Sprinkle with 2 tablespoons sugar. Cut crust from 5-6 slices of bread., then cut break in thin strips. Place strips very close together over apples. Topping: 1 stick margarine (or butter), melted; 1 cup sugar; 1/4 cup brown sugar; 1 heaping tablespoon self-rising flour; 1 teaspoon vanilla; 1 teaspoon lemon juice; 1 egg, well beaten. Mix all ingredients together and spoon mixture over bread. Bake for 30 minutes at 350º. This man knows his cobbler! COCONUT PIE If you like overlooked, you’ll love DORA & FRANCES MORROW’S recipe for Coconut Pie. 1 cup sugar; 2 egg yokes; 2 heaping tablespoons flour; 1 tea- spoon vanilla; 1/2 cup coconut; 1/2 stick butter; 1 1/2 cup milk. In a double boiler, put sugar, flour and egg yokes, and mix together. Add in vanilla, coconut, butter and milk. Stir. Let this cook until it thickens. Make your own crust, or you can use a 9” deep dish pie shell. Prick the pie shell and cook until done according to the direction of the package. Pour the filling in the crust. Top with meringue topping and coconut. Put in oven on broil to let the coconut get toasted (make sure you watch it closely). EGG CUSTARD PIE A too often delicious pie is the old timey’ Egg Custard Pie! JULIA BYERS shares her recipe and it’s delicious. 3 eggs; 2 cups milk; 1/2 cup sugar; 2 tablespoons margarine (I use butter); 1 teaspoon vanilla. Beat eggs and sugar together. Melt margarine or butter in with the milk. Pour into egg mixture. Add vanilla and beat well. Pour mixture in a “deep” pie curst. Now simply bake at 350º for 50 minutes or until done. It’s a light and very good pie. For me, it’s always been one of my favorites. Remember to send a package from home to our troops. Let them know you get in the kitchen and show the love.
