Thursday, December 16-December 22, 2010 www.shelbyinfo.com Mixins & Fixins with Auntie Gale MRS. BOSTON’S PIE By: LaRue Boston 1 Box Graham Crackers 1 pkg. large Marshmallows 1 pkg. Coconut 1 pkg. walnuts 1/2 cup raisins 1 cup Pet Milk Cherries – halved Crush Graham crackers. Mix all ingredients. Melt marshmal- lows in milk over low heat, stir- ring frequently. Pour over mixture after melted. Press in waxed or greased pan. Put in refrigerator to cool. Cut in pieces. Delicious anytime of year. CROCK POT LASAGNA By: Eugene F. Allen 1 lb. cooked lean meat (ground beef, turkey or chicken) 2 onions, finely chopped 2/1/2 teaspoons Onion Powder 12 oz. cottage cheese or ricotta cheese 1 cup grated cheese (cheddar, Monterey Jack or Mozzarella) 12 oz. tomato paste 1-1/2 cups water 2 tablespoons dried basil 2 tablespoons parsley 1-1/2 teaspoons salt 1/2 teaspoon pepper 8 large lasagna noodles (approx. one 10 oz. box) Instructions: In a bowl, combine every- thing except the lasagna noo- dles. Mix well. Spread 1 cup of the mix in the bottom of your slow cooker. Break up three (3) of the noodles so they will fit in the slow cooker, and lay them over the sauce. Cover with 1 cup of sauce. Spread the sauce so the noodles are covered entirely. Break up three (3) more noodles and lay them over the sauce. Cover these with one cup of sauce, making sure to cover each noodle entirely. Repeat the procedure one more time, using the last 2 noodles. Use all the remaining sauce, making sure that each noodle is cov- ered entirely. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. Makes 8 servings LEMON MERINGUE PIE By: Wanda I use the Jumbo size eggs. Be sure to use at least the extra-large eggs or use 6 of the regular ones. One 9-inch pie pastry cooked FILLING: 6 tablespoons cornstarch 1-1/2 cups sugar 2 cups warm water 5 extra large egg yolks, slightly beaten 1/2 cup lemon juice Zest of 1 lemon (peeling) 1 tablespoon butter Preheat oven to 400º. For the filling: In medium saucepan, combine cornstarch and sugar, mixing well. Gradually add 2 cups warm water and stir until dissolved. Mix in remain- ing pie filling ingredients; on medium heat bring to a boil and cook until thickened, stirring con- stantly. Remove from heat and cover with plastic wrap directly $ on top of filling until you make the meringue. Pour filling into baked pie shell and then cover with meringue. Bake in preheated 400º over 12 to 15 minutes until golden brown. Allow cooling at room tem- perature 2 to 3 hours. Place in refrigerator to chill completely several hours or overnight. MERINGUE: 5 extra large egg whites 1/2 teaspoon cream of tartar 1/2 cup sugar In medium bowl beat egg whites and cream of tartar until frothy. Gradually beat in the sugar one tablespoon at a time. Beat on medium speed until stiff peaks form but not dry. Spread over hot lemon filling and care- fully seal to edge of the pie crust. BRENDA’S SWEET POTATO BISCUITS 3/4 cup shortening 1 teaspoon sugar 1/4 teaspoon salt 2 cups mashed sweet potatoes 3 cups self-rising flour Work shortening, sugar and salt into potatoes. Work in 2-1/2 cups flour. Reserve 1/2 cup flour to pat out biscuits. Bake at 450º for 10 to 15 minutes.
