Stir in pumpkin puree, cream, butter, 1/2 teaspoon salt & 1/2 teaspoon pepper; set aside. Preheat oven to 375 F. In large skillet over medium heat, heat oil. Add spinach & garlic; cook 2-4 minutes, or until wilted. Let cool completely; squeeze out excess moisture. Season with 1/4 teaspoon salt & 1/4 teaspoon pepper. In medium bowl, combine ricotta, egg & spinach. Stir in 1 cup mozzarella, 1/2 cup Parmesan cheese & remaining salt & pepper. Layer half of rice mixture in greased 8'' square baking dish. Top with spinach mixture & remaining rice mixture. Sprinkle with remaining mozzarella & Parmesan. Cover with foil; bake 30 minutes. Remove foil; bake 15-20 minutes, or until golden brown & bubbling. Fold foil sides in over mixture; fold top & bottom foil ends inward and seal. Place packets on rimmed cookie sheet; bake until sweetpo- tatoes are tender, about 25 minutes.
