We're used to seeing Zimmern chow down on some weird food of- ferings, but this time, he's the one dishing it out. A/Otsego Manor 2 x 3 Cooking this week One night only: 'Bizarre Foods' ventures into pop-up territory TV Media or some people, "pop- up" is associated with often-unwelcome inter- ruptions to some otherwise leisurely online reading. But for foodies, that term is actu- ally generating a lot of excite- ment and interest these days. The pop-up restaurant is the promise of enjoying a unique dining experience that is here today, gone tomorrow -- a flash in the (frying) pan of sorts. Chefs open up a tempo- rary, makeshift restaurant for a limited time only (some- times just one night), and use social media to draw in curi- ous diners to sample their creations that might not be found anywhere else. It's not necessarily a new phenomenon, but it's certain- ly picked up steam in the last few years, and the Travel F Andrew Zimmern in "Bizarre Foods America" Channel has picked up on this exciting vibe. Anthony Bour- dain stopped in at one pop-up in San Francisco a few months ago in his series "The Lay- over," and now Andrew Zim- mern is chronicling his own foray into this kind of venture. The Aug. 6 episode of Trav- el's "Bizarre Foods America" By opening his own one- night-only pop-up inside the Royal/T Cafe, Zimmern set out to conquer new ground in a food scene that has already been pretty extensively chronicled. In preparation for this, cameras followed Zim- mern as he explored the city to sample the local food scene, meet some of its top chefs (including chef Ludo Lefebvre of pop-up eatery Lu- doBites) and figure out what the locals are eating. It's a very Zim- mern-like menu, but one that doesn't sacrifice taste for the shock factor. For many chefs , the appeal of the entire concept lies in the freedom of being able to serve up your own vision without having to fit it into a restaurant's brand. And since venues can range from an old warehouse to an already-es- tablished restaurant during its off-hours, they're not tied down to a lease that can eat away any profits. It can be a good thing for up-and-coming chefs, too. These temporary setups can help them showcase their abilities and generate publici- ty to build up the name recog- nition faster, which can give them a boost in this business.
