As I was falling, I knocked some things off the dresser and then appar- ently fell onto one of them, the results were a trip to the ER and lots of stitches. I find that one can do ma- ny things with one hand. I am happy to report that I am doing well and feel lucky, as I could have easily hit my head on the edge of the chest or dresser or had broken bones. The stitch- es come out on Feb. 17 and I hope to be able to do all things with both hands then. I know many sent up prayers for me, and the Wood Memo- rial Cheerleaders sent me a personal message with a pic- ture of them which made my night, since I could not make their game. I think it is their first game I have missed. FLUFFY BISCUITS By Monica Sinclair I turned 40 today and last week- end, for the first time in my life, I made homemade biscuits. My husband had been sick all week- end and I went to the store to get him things that would be easy on his stomach. When I returned, he asked me if I had gotten any biscuits. With the answer being "no," I searched the internet for an easy biscuit recipe using in- gredients I already had. Luckily, I stumbled onto one and in no time, I had whipped up a batch of biscuits, and good biscuits I might add. They were super sim- ple, fluffy and moist, and I know I will be making them again soon. Enjoy! Source: tasteof home.com INGREDIENTS YOU'LL NEED: 2 cups all-purpose flour 4 teaspoons baking powder 3 teaspoons sugar (I used Splenda) 1/2 teaspoon salt 1/2 cup shortening (I used margarine) 1 large egg 2/3 cup 2 % milk (I used skim milk) MEALS IN Monica's MINUTES 1. In a small bowl, combine the flour, baking powder, sugar and salt. 2. Cut in shortening until the mixture resembles coarse crumbs. 3. Whisk egg and milk; stir into dry ingredients just until moistened. 4. Turn onto a well-floured surface; knead 20 times. Roll to 3/4-in. thickness; cut with a floured 2-1/2- in. biscuit cutter. Place on a lightly greased bak- ing sheet. 5. Bake at 450° for 8 -10 minutes or until golden brown. Serve warm. Yield: 1 dozen.
