In fact, given how passionately both fans and critics feel about them, one could even argue they're at the top of the food chain (dessert-wise, anyway) in terms of popularity. Cupcakes have been com- fortably basking in the media spotlight for years now thanks to shows such as Food Network's "Cupcake Wars," WEtv's "The Cupcake Girls" and TLC's "DC Cupcakes." And a large part of their ap- peal lies in the number of fla- vor combinations that can be created to suit anyone's pref- erences. "Cupcake Wars" has cer- tainly had some unique fla- vors in its three seasons of competition including mango coriander, banana toffee, sweet potato cider and even chocolate cherry cola. Who would have thought you could get so many different results out of a basic mix of flour, sugar, eggs, milk and butter? Now, imagine having to find replacements for those last three ingredients. That's the big theme on the Sunday, March 4, episode of "Cupcake Wars," as a new batch of competitors do battle in an all-vegan edition. It's not the first time vegan cupcakes have been featured -- in fact, vegan bakers Chloe Coscarelli and Doron Petersan even beat out their non-veg- an counterparts in previous episodes. This time, the bakers will be competing for the prestige of having their con- fections featured at the open- ing of the first-ever Los Ange- les Green Festival. Just as cupcakes have been around far longer than the re- cent trend, so too has vegan- ism. The term itself was first coined in 1944 and has come to describe a plant-based diet that is devoid of any animal- derived products -- no meat, dairy, eggs or fish. True, veg- anism is more restrictive than vegetarianism, which focuses primarily on a meat-free diet; but despite the stigma it might carry with staunch meat-eaters, its practitioners have been growing in num- "Cupcake Wars" host Justin Willman bers in recent years. Having to find substitu- tions for common ingredients generally requires creativity and imagination, plus a whole lot of experimentation. Luckily, increased awareness of specialized dietary needs these days has resulted in more substitutions available to consumers than ever (par- ticularly those living in larger urban areas). Gone are the days of plain, carob-covered desserts: it's all about repli- cating the familiar, then push- ing the flavor boundaries that little extra mile for a sweet treat that would impress even the toughest critics.
