I'm using the New Hope United Methodist Women cookbook "A Taste Of Heaven". Turkey Pie This week, I'm adjusting this recipe by using leftover turkey to make a great meal. DEBORAH GREGG has a recipe for Chicken Pie that I converted to Turkey Pie. It's that simple. 1 chicken, boiled and deboned (instead, I used leftover turkey white and dark meat); 2 cups chicken broth (I used broth in a box); 1 can cream of chicken soup; 1 cup self-rising flour; 1 cup buttermilk; 1 stick butter, melted. Take turkey pieces cut up and put into casserole dish. Combine chicken broth and soup and pour over turkey pieces. Combine self-rising flour, buttermilk and melted butter and spoon over turkey mixture. Bake at 400º for 30 minutes or until crust is golden brown. It will be delicious and help you use up the left overs after Thanksgiving. Tip: Use the leftover turkey parts and carcass to put in a large pot with some water and seasonings you like. Cook for an hour or so on the stove and make a nice turkey broth. You can then strain the broth and later make a big pot of delicious homemade noodle soup. Waste not - want not! Coleslaw is always a welcomed addition to any meal. I made this recipe shared by PEGGY GREENE. It's her Maw Maw's Coleslaw. It's so simple but the addition of the apple gives it a great crispy taste. 1 head cabbage; 1 apple; mayonnaise, just enough to coat and mix; salt and pepper to taste. Using a food processor, shred cabbage. Core apple, then shred with cab- bage. Add a little salt and pepper; mix in mayon- naise, just enough to hold together. Serves up to 6. How easy is this and very tasty. Coleslaw Orange Congealed Salad It's been a while, but I really enjoy a congealed salad. Here is JEANETTE NEWTON'S recipe for Orange Congealed Salad. 2 packages orange Jello; 2 cups boiling water; 1 large can pineapple; 1 package Dream Whip (I used Cool Whip); 1 3-ounce package cream cheese (softened); 1/2 cup chopped nuts. Dissolve Jello in boiling water, add pineapple; mix well. Congeal for 2 hours. Prepare Dream Whip as directed on package. After Jello congeals, whip Jello and remaining ingredients together; refriger- ate. I served mine over a bed of lettuce and used it to begin the meal. Frosty Fruit Drink KATHIE SMITH gives us a refreshing drink that has become very popular with my family. Here's the recipe for Frosty Fruit Drink. 1 cup unsweetened raspber- ries; 1 medium ripe bananas; 1 1/2 cup frozen vanilla yogurt; 1 1/2 cups raspberry blend juice, chilled. In a blender or food processor, combine all ingredients. Cover and process until smooth. Pour into glasses; serve immediately. Makes 4 servings. The latest term for this is "smoothie".
