Well, this week, I found a recipe that will not only satisfy the crunch factor but is healthy as it provides a quarter of a woman's daily magnesium requirement in just a ¼ cup of this delicious snack. Why is magnesium important? It helps your bones absorb calcium, therefore, reducing the risk for osteoporosis. Enjoy and be healthy! Source: Taste of Home Magazine (Sept./Oct. 2014) INGREDIENTS YOU'LL NEED: COOKING DIRECTIONS: 6 tablespoons sugar 2 tablespoons baking cocoa 1 egg white 1 tablespoon instant coffee granules 2 cups salted shelled pumpkin seeds 1. Preheat oven to 325°. Place sugar, cocoa and coffee granules in a small food processor; cover and pulse until finely ground. 2. In a bowl, whisk egg white until frothy. Stir in pump- kin seeds. 3. Sprinkle with sugar mixture; toss to coat evenly. Spread in a single layer in a parchment paper-lined 15x10x1-in. baking pan. 4. Bake 20 -25 minutes or until dry and no longer sticky, stirring every 10 minutes. 5. Cool completely in pan. Store in an airtight con- tainer.
