The specialty channel has opted to spice up its Friday evenings by adding “Heat Seekers” to its lineup. Origi- nally a one-hour special on sister station the Cooking Channel, the new series is an ode to all things spicy -- from chili peppers to dishes found worldwide including Mexican and Korean staples. Each half-hour episode is hosted by Food Network reg- ular Aaron Sanchez (“Chopped,” “Chefs vs. City”) and Roger Mooking (“Every- day Exotic”). As they seek out dangerously fiery foods across the country, they stop in cities such as Miami, Phila- delphia, Seattle and Los An- geles to learn the secrets be- hind some of the craziest of- ferings found. But it’s not just a mere showcase for these foods -- the hosts put their own taste buds on the line in each episode by sampling the dishes and proving who can handle the heat best. Earlier episodes followed the duo in New Orleans, where they checked out hot sausage po’ boys and some of the spiciest crawfish. They also sampled Chicago’s spici- est fare and were challenged to eat a 10-inch pizza within 10 minutes -- which wouldn’t seem so bad if the pizza wasn’t covered with jalapeno and scotch bonnet peppers. It’s the kind of good-na- tured display of bravado that’s prevalent among heat aficionados, though for most “chili heads” it’s all about the flavor and not just the fire. The endorphin rush may keep them coming back for more but fortunately for them, re- search indicates that a little heat can have some health benefits, including a boost to one’s metabolism. For the spice-shy, however, capsaicin is the enemy. That’s the active ingredient that causes the body to react, and it’s usually concentrated in the pepper’s white pith. To de- termine a pepper’s level of pungency, scientists measure the amount of capsaicin pres- ent in terms of Scoville heat units (SHU), which can run from 0 (no heat) to upwards of 1 million SHUs for some of the world’s hottest chilies. By comparison, police-grade pepper spray clocks in at 5 million SHUs. It’s also capsaicin’s fault that we associate “heat” with “spiciness,” as alluded to in the series title. Once in- gested, the capsaicin binds to a special group of receptors found inside the mouth which in turn trigger the body’s re- action. But these reactors are actually designed to detect heat, not spiciness. So the next time you feel your mouth is on fire after eating a chili pepper, it’s because your body thinks it actually is.
