While vegetarianism may be on the rise, there’s no denying that the United States has had a long- standing reputation of being a nation of meat-eaters. In fact, some estimates in- dicate that Americans -- who represent roughly 4.5 per cent of the world’s population -- account for 15 per cent of the world’s total meat consump- tion. The nation’s love of protein isn’t exactly a recent phe- nomenon, but that’s just the kind of history that is ex- plored in the two-hour special “Meat America.” Premiering Wednesday, July 27 on Histo- ry, the program is a cross- country odyssey that looks at how Old World meat-eating preferences made their way to the New World. During his many stops, host Jamie Sta- chowski checks in with farm- ers, ranchers and chefs to see what’s been cooking in Amer- ica’s kitchens since colonial times, and just how it all got there in the first place. In the Midwest, Stachowski discovers how the all-Ameri- can hot dog can trace its roots back to the sausages brought over by the wave of immigra- tion from Eastern Europe dur- ing the late 1800s. A later stop at Chicago’s Union Stock Yards delves into the history of the American beef industry (worth $70 billion today) and looks at how it helped spur America’s industrial revolu- tion and inspired modern pro- duction-line techniques. And you can’t mention the beef in- dustry without a look at the prized cattle industry in Texas, so Stachowski heads to the Lone Star State to sample some tasty longhorn beef. The special doesn’t focus strictly on beef, pork and chicken either. In fact, those animals weren’t native to the North American continent and only took root here in post-Columbian times when Europeans brought them over. To explore more regional “ingredients,” Stachowski heads down to Louisiana to take part in Lafayette’s annu- al Black Pot cook-off. But for- get chili -- the menu at this unique cook-off features meats found locally, including alligator, raccoon, squirrel and even snapping turtle. Stachowski is a good fit for the subject. A native of Buffa- lo, the renowned “master of meats” grew up on a farm where they prepared sausag- es and traditional Polish fare. After entering the culinary field, he worked under great chefs such as Wolfgang Puck and Joachim Splichal before running several restaurants in the Washington, D.C. area. But his specialty lies in char- cuterie and his focus of late has been on his eponymous line of meat products, which are all hand-made and sold locally.
