Fiesta fare Food celebrates Cinco de Mayo Marcela Valladolid from “Mexican Made Easy” TV Media A s many prepare to cele- brate Cinco de Mayo this week, the Food Network is building up the excitement, thanks to some south-of-the-border-themed episodes. Beginning Saturday, April 30, and running through to the big day on Thursday, the lineup will be dotted with ev- erything from fiery spiced fare to Tex Mex cooking. Whether or not viewers celebrate the holiday, there’s something for everyone, including chili reci- pes and barbecue dishes that are perfect for sunny days. The bulk of the fiesta- themed programming runs during the weekend, includ- ing new episodes of “Guy’s Big Bite” and “Cooking for Real,” which showcase the flavors of Mexican cuisine. In a new episode of “Mexican Made Easy,” Marcella Vall- Over the years, Cinco de Mayo has become a nation- wide celebration of Hispanic culture in America (it’s been mistakenly referred to as Mexican Independence Day, which is actually on Sept. 16). Surprisingly, Cinco de Mayo garners limited attention in Mexico outside of Puebla. That’s because that city is the site where it originally began, as a commemoration of the Mexican army’s 1862 victory in a battle against an invad- ing French force. Stateside, it’s a time for cel- ebrating with family, music and food. Indeed, food plays an important part of any Cin- co de Mayo celebration, and it’s hard to ignore Mexican cuisine’s influence on what North Americans eat every day. Sure, you’ve got your na- chos, your salsa, tacos, guaca- mole, margaritas, chili pep- pers ... but more importantly, Mexico’s Aztec people intro- duced the world -- through the Spanish conquistadors -- to corn and chocolate (and what would Valentine’s Day be without that one?). It’s also difficult to pinpoint any one dish that truly repre- sents Mexican cuisine, since each region favors its own unique combination of spices and other ingredients native to the area. But if you’re look- ing to celebrate Cinco de Mayo, Food’s got it all cov- ered. Tune in (or go online at foodnetwork.com) to get reci- pes for everything from gua- camole to tres leches cake.
