Rutherfordton Kiwanis www.rutherfordweekly.com Wednesday, November 24-December 1, 2010 RUTHERFORD HOUSING PARTNERSHIP (RHP) NEEDS YOUR HELP The fl oors in the mobile home Alma Forney Hardy had lived in for at least 30 years were caving in. In some places, layers of carpeting was all that kept the 78-year-old from stepping through holes in the rotted fl oor. But Alma recently moved into a new house, one donated to Rutherford Housing Partnership and moved from the Rutherford County Airport. It was a fi rst for RHP, so we followed the example of our buddies at Habitat, fi rst renovating and then selling the house to Alma and her son at cost with no interest. It’s the kind of venture for which RHP was recognized this fall by the N.C. Center for Nonprofi ts. Of particular note were our collaborations with other local agencies to get the best possible outcome at the best possible cost for those living in substandard housing throughout Rutherford County. The needs are overwhelming: A current average of 16.8% of Rutherford County residents live in poverty, more than 2% more than the state average. That’s more than 10,000 people. 22% of the homes here have been identifed as in badly worn or poor condition. That’s 1 in 5 homes. Can we count on you? Today, I’ll be giving you just that! I’m taking my “A Taste Of Heaven” cookbook off the shelf. It’s the cookbook from New Hope United Methodist Church in Rutherfordton. I’m going to the kitchen and start with a salad. This is RUTH THOMPSON’S reci- pe for BROCCOLI SALAD. It is very tasty and a nice addition to any meal. I like it because you make it in advance and let it marinate for a least 8 hours. 1 bunch broccoli (I use fresh florets) 1 large red onion 1 cup shredded cheese (your choice) 6 slices bacon, fried crisp and crumbled 1 cup mayonnaise 1/4 cup white vinegar 2 tablespoons sugar Chop broccoli buds, dis- carding stems (I peel them and save them for stir fry). Peel and chop onion. Mix broccoli, onion, cheese and crumbled bacon in a large bowl. Mix mayonnaise, vin- egar and sugar in a small bowl; add to broccoli mix-                  ture., Marinate at least 8 hours. (I usually put this in a zip lock bag and turn it once or twice. It saves space in the refrigerator and is travel-able! How clever is that?) This next recipe I found was a colorful hit when added to a dinner table. I also used the small carrots in this recipe. MARTHA THOMPSON shares her recipe for MARINATED CARROTS. 1 pound carrots 3/4 cup chopped onion (I used red - more colorful) 3/4 cup chopped bell pepper (I used yellow for the color) 1 can (10 3/4 ounce) tomato soup 1/4 cup salad oil 1/4 cup vinegar 1/2 cup sugar 1 tablespoon Worcestershire sauce 1 tablespoon mustard 1/8 teaspoon salt 1/8 teaspoon pepper Cook carrots until tender, drain. Mix balance of ingre- dients; pour over carrots. Let marinate in refrigerator overnight. (Again, I put it all in a zip lock bag). This recipe from GILDA DECK is a little unusual, but a nice addition to your table. Here is her recipe for HERBED LIMAS AND PEAS. 1 10-ounce package fro- zen baby limas, thawed 1 10-ounce package fro- zen peas, thawed 3/4 teaspoons salt 3/4 teaspoons basil 2 green onions, thinly sliced - use part of the green tops 2 tablespoons butter 2 tablespoons water Mix all ingredients togeth- er and pour into an oblong baking dish. Sprinkle crushed Ritz crackers over lthe top and bake at 325 for 1 hour. The more I eat this dish, the more I enjoy it. Try it! I’m now headed to the front porch with my dog “Kitchen”. I believe I’ll make a cup of hot choc- olate with marshmal- lows. A nice winter treat. Remember, you need to get in the kitchen and show the love! Some of the best cooks in the world are right here in Rutherford County! Their time tested recipes are the reason we all love a good home cooked meal. We proudly share these good recipes with you!
