Page 8 - shelby shopper & info - 704/484-1047 www.shelbyinfo.com Thursday, August 26-September 1, 2010 BACON-ONION CORNBREAD Auntie Gale’s Choices 1 Tbsp. chopped fresh parsley 2 to 3 thick slices bacon, cut into 1/2 inch pieces 1 cup chopped onion 2 cups Aunt Jemima Self- Rising Corn Meal (white or yellow cornmeal) 1/3 cup all-purpose flour 1 cup buttermilk 3/4 cup milk (such as 2%) 1 cup cream style corn 5 tablespoons butter, melted 1 egg Heat oven to 400º. In a non stick large oven proof skil- let, fry bacon and chopped onion together until browned about 5 minutes (leave in pan). Combine dry ingredients and then add milk, buttermilk, melted butter, corn and egg; mix well by hand, don’t over mix; pour over bacon/onion mixture and then bake 25 to 30 minutes until golden brown. Turn out onto serving plate and cut into serving size piec- es. Serve hot. GRILLED NEW POTATO PACKET 1/2 lb. each red & white new potatoes (about 4 each) 2 Tbsp. water 2 tsp. oil 3 Tbsp. Kraft Sun-Dried Tomato Dressing 2 Tbsp. Kraft Grated Parmesan Cheese Heat grill to medium heat. Place potatoes in center of 18 inch-long piece heavy- duty foil; drizzle with water and oil. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Grill 18 to 20 min. or until potatoes are tender. Cut slits in foil to release steam. Open packet. Top potatoes with remaining ingredients. GRILLED STEAK & VEGETABLE SALAD 1/2 cup Kraft Light Balsamic Vinaigrette Dressing, divided 1 Boneless beef sirloin steak (3/4 lb.), 1/2 to 3/4 inch thick 2 large Yellow peppers, cut lengthwise in half 8 cups torn spring greens or torn mixed salad greens 2 large tomatoes, cut into wedges 1/2 cup thinly sliced red onions Heat grill to medium-high heat. Reserve 1/3 cup dress- ing. Brush remaining dressing lightly onto 1 side of steak and onto cut sides of peppers. Place steak and peppers on grill, dressing-sides down. Grill steak 5 min. on each side or Through A Woman’s Eyes By Martha Hynson until medium doneness (160º F) and grill peppers 10 min. (Peppers do not need turning.) Meanwhile, cover 4 serving plates with greens; top with tomatoes and onions. Cut steak across the grain into thin slices; cut peppers into strips. Arrange steak and peppers over salads. Drizzle with reserved dressing. SENSATIONAL FOIL- PACK VEGETABLES 1 Zucchini, cut into 1-1/2 inch chunks 1 cup button mushrooms 1 each red and yellow pepper, cut into 1-1/2 inch squares 1 cup large cherry tomatoes 1/4 cup Kraft Light Zesty Italian Dressing 2 Tbsp. Kraft Grated Parmesan Cheese Heat grill to medium-high heat. Combine vegetables, tomatoes and dressing. Spoon onto center of large piece of heavy-duty foil. Bring up foil sides. Double fold top and ends to seal packet, leav- ing room for heat circulation inside. Grill 8 to 10 min. or until vegetables are crisp-tender, turning after 4 min. Cut slits in foil to release steam before opening packet. Sprinkle veg- etable mixture with cheese. Unbalanced Unbalanced In her hand she holds the distaff and grasps the spindle with her fingers. She opens her arms to the poor and extends her hands to the needy. When it snows, she has no fear for her household; for all of them are clothed in scarlet. She makes coverings for her bed; she is clothed in fine linen and purple. -- Proverbs 31:19-22 “I just want a balanced life.” How many times have I heard women utter these words? How many times have I said them myself? The Proverbs 31 woman certainly seems to have a balanced life. She works hard and glides gracefully along accomplishing all she sets out to do. Her children are well clothed, her home is well furnished, and she is fashionably dressed as she graciously extends her hands to those in need. In my journal a while back, after reading Proverbs 31: 20, I wrote a note reminding myself to “arrange my life so that I have time to reach out to those in need.” In my most idealistic moments, I can imagine being like this woman. Then reality hits. Last week is a perfect example. It was the first week of school. As a teacher, my first day back was Monday. The kids started on Thursday. As I planned for a new school year, I envisioned myself gliding along, working hard, but never getting ruffled, extending a hand to everyone in need. I’m smart enough to know that I could never do this on my own, so I planned to rise early every morning for a dedicated prayer time. On Monday evening, my daughter asked me to go to the mall with her. She owns scarlet clothes (see verse, above) and any other color you might want, but nothing suitable for the first day of school. She had her own money so, even though it was not in my plans, we went shopping. We got home late. Therefore, I got in bed late. Therefore, I did not get up for my dedicated prayer time on Tuesday morning. On Tuesday, our dog, a 170 lb. mastiff, became nervous during a morning thunder storm and chewed on the back door until the glass fell out. She then went inside and spent the remainder of the day alone in the house. Amazingly, she wasn’t hurt, but I can’t say the same for the house. Tuesday turned out to be another late night. On Wednesday I stayed up late trying to accomplish what I had planned to do on Monday and Tuesday. On Thursday, I woke up with a sinus headache and an upset stomach. Instead of praying peace- fully for each child in my class before school began, I prayed that I would stop throwing up so I could make it to school. What happened to my plan? What would the Proverbs 31 woman do? I’m not sure, but another entry in my journal comes to mind. In John 5:30, Jesus says, “I do nothing without consulting the Father.” Next to this verse I wrote, “Wow, I do lots of things without consulting you, Lord!” Francis Chan, author of Crazy Love and The Forgotten God, says, “So many times, we ask God to “show up” in our lives in whatever we might be doing, forgetting that this is His party.” The more I think about it, the more I believe that what women truly long for is not a balanced life but a peace-filled life. Ironically, Jesus taught that the only way to have a peace-filled life is to live a life that is radically unbalanced in our commitment to Him. So what about the virtuous wife described in Proverbs? Her life seems pretty balanced and not radical at all. She seems to have all her bases covered. For example, verse 21 says, “she has no fear for her household for they are all clothed in scarlet” and she’s dressed to the nines in “fine linen and purple.” She actually sounds like many of us today trusting in our “stuff.” If we relate this passage to Christ’s teaching, however, I believe we can see a deeper meaning. Could the scarlet clothes repre- sent the blood of Christ- the only thing in which we should trust, and doesn’t purple represent royalty? Could this mean that, no matter what we have on, or what’s going on in our lives, we can be confident because we are daughters of the King? When I look at the scripture from that point of view, I can see why this woman had no fear. I’m going to stop searching for that elusive “balanced life” and pursue a peace-filled life, instead, by trusting Christ in a totally radical and unbalanced way.
