Top mixture with stove top dressing or crumbled up Ritz crackers. Melt one stick of butter and pour on top. Bake at 350 degrees for 30 minutes. ENCHILADA PIE Fritzy Sellers 1 lb. ground beef 1 chopped onion 1 tbs. butter 8 oz. tomato sauce 2 cups Cheddar cheese 1 pk. Taco seasoning mix Garlic salt 1 tbs. chili powder 6 corn tortillas (buttered) 2/3 cup water Sauté beef. Drain. Add onions, garlic and other seasonings. Add tomato sauce. Later tortillas, beef, sauce and cheese in cas- serole dish ending with cheese. Bake 350 degrees for 30 minutes. Serve with chopped lettuce and to- mato. Top lettuce and to- mato with small amount of taco seasoning. Garnish above with taco seasoning and sour cream if desired. BEEF AND POTATO BAKE Pat Benton 1 lb. cooked hamburger, drained 1 can cream of mush- room soup 1 cup Cheddar cheese 1 onion, chopped 1 pkg. Tater Tots Mix all ingredients. Place in casserole dish sprayed with cooking spray. Bake at 350 for 1 hour. SALMON PATTIES WITH LEMON SAUCE Bill Lovern 1 can salmon ½ tsp. black pepper 1 tbs. Dijon mustard ¼ cup crushed Saltine crackers 1 egg 1 tbs. dried parsley LEMON SAUCE Juice of 1 lemon 1 tsp. chopped fresh parsley 2 tbs. margarine In a medium bowl, com- bine all patty ingredients together. Divide into 4 equal servings. Shape into patties. Coat a large non- stick skillet with cooking spray. Cook for 5 minutes on each side. To prepare sauce, combine all ingre- dients in a saucepan and simmer 5 minutes. Serve 2 teaspoons sauce over each salmon patty. New Edition Every Thursday!
