Sushi, and much more, on Pewaukee Lake Slice N' Dice Seafood, Sushi and Steak opens By Gregg Wandsneider Special to The Freeman PEWAUKEE – Whether it's a date night for Valentine's Day or sitting on the patio enjoying the summer weather, Slice N' Dice Seafood, Sushi and Steak is a place for all seasons. Waukesha County residents have a new place to get their sushi, seafood and steak fix with Slice N' Dice now open on Pewaukee Lake. "It's not just raw fish," said Kos Saeng, the restaurant's executive chef and general manager. "I'm trying out a lot of new recipes." For the past 9 years, Saeng, whose sister-in-law owns the Pewaukee business, has been the chef for sushi restaurants in Brookfield, downtown Milwaukee and now Pewaukee. The Pewaukee clientele is not new to Saeng, as he has catered events for St. Anthony's Parish and all around Pewaukee Lake. He is not opposed to trying new sushi recipes. "Who doesn't love bacon?" he asked, hinting at one of the recipes he may be working on. In a competitive sushi environment, Saeng doesn't just want to be another fish swimming upstream. "We've done this for quite a while, and it's succeeding," Slice N' Dice Seafood, Sushi and Steak. said Saeng. The small intimate setting, including the sushi bar that seats 8, allows Saeng to interact with his customers on a more personal level. At previous restaurants, Saeng has been fortunate to have a regular customer base and prides himself in knowing his customers by name and knowing their order as soon as they walk in the door. In addition to two-top and four-top tables, the restaurant will have a party room that will comfortably seat 10 to 12 people. Saeng described the restaurant as higher end, but added, "It's not going to be anything that breaks the bank." The restaurant is open for lunch and dinner and will take reservations. Saeng and his staff can be reached by dialing at 6950900. Saeng hopes to have a website soon. So I probably grew up more with the idea that I wouldn't work when I had children and my mom was a stay-at-home mom and I really value that, but I also learned along the way that you can have both. Does it take a lot of commitment? Absolutely But . you can have both. So I hope that I can encourage, and am an encouragement, to other moms out there who are attorneys to pursue it, to find the right spot for you. For some people that will be part time, for some people that will be full time. I am of the belief that it affects many of us, it has affected me personally One . of my former clients was one of the overdose deaths in 2012. It happened right after I took the bench and I look back on that case and I go "Oh my gosh, what could I have done differently I ." didn't know the true level of his dependence. He was 19. I keep his memorial card on my bench as a reminder. And I share his story sometimes, not by full name or anything, but I try to tell parents this is a really tough situation everyone is in. I don't want to see you lose your son or daughter. I have had family members struggle with prescription pill addictions. It doesn't matter what your educational background is, it doesn't matter what your economic situation is. We have an epidemic with heroin and synthetic opiates in this country and it's scary I . think drug courts have a role in getting people over their addictions, to be successful, to become a recovering addict, but also keeping the community safe. There are economic benefits to drug court and so I am hoping to kind of educate myself more and more to be a good advocate for drug courts and why they are important to our community, to the protection of the community and to treating these individuals. FREEMAN: What has the training been like for drug court? What are you learning from it? DOROW: A judge has a very particular role in any treatment court so I am learning the 10 key components of any treatment court, the standards and best practices for judges within that role and educating myself on the types of drugs that are out there. Sanctions are a huge part of any successful drug treatment court, so I am learning about the types of sanctions, when to sanction, the different phases of drug treatment court. The drug court model is an evidence-based model. There is a lot of study behind it. So there's a lot to learn. I am very excited about it because many people on my docket have drug or alcohol issues and there are a lot of reasons why people use. And drug courts are geared toward the true FREEMAN: Do you conaddict. That's one thing I am sider yourself to be a really learning about is the tough judge? How do you difference between an abus- view your role as a judge? Get to know ... My favorite vacation place is: Hilton Head Island, S.C., and a close second is Mountain Star Ranch in Duffy, Colorado DOROW: My number one goal is to be a fair judge. My goal is to give each side a fair hearing, to really listen, apply the law in a mutual, but a fair way If in any par. ticular situation that requires me to be tough, I will be tough. If in a given situation it requires me to give some leniency, then I can be lenient. Each situation is very different and I try to look at each situation on its own. FREEMAN. What has your experience been like serving as a judge? What have you learned since being sworn in? DOROW: I have enjoyed it immensely I get a lot of sat. isfaction out of this position. There are days where it is extremely tough, there are days when it's more routine. I learned this I think even before I became a judge, but the vast majority of the criminal defendants we see are good people making bad decisions. Don't get me wrong, there is evil out in the world and we see that evil in Criminal Traffic and then Criminal Division, but these people are our brothers, our sisters, our aunts, uncles, our parents and even our grandparents.
