and chopped into half-inch pieces) 4 whole shallots 3/4 cup white wine vinegar 1/4 cup honey 4 tsps dijon mustard 1 cup Sendik's Extra Virgin Olive Oil 1 tsp salt 1 tsp black pepper 2 cups crumbled feta cheese 2 cups Craisins Cook lentils according to packaged directions, drain and cool. Add cleaned kale and shallots (cut in half and thin sliced) to a large bowl and set aside. In a small bowl add vinegar, honey and dijon mustard. Slowly whisk in the olive oil and season with salt and pepper. Add dressing to kale and mix well with hands. After kale and dressing are blended well, add lentils, feta cheese and Craisins; toss gently. Roasted Root Vegetable Soup 6 - 8 medium Roma tomatoes, quartered 1 large red onion, chopped 1 large sweet onion, chopped 6 large celery ribs, chopped 4 large carrots, chopped (scrubbed, not peeled) 3 medium parsnips (scrubbed, not peeled) 1 rutabaga, peeled and chopped coarsely 4 Yukon Gold potatoes (or other firm waxy potato) 1 fennel bulb, chopped 1 red bell pepper, seeded and chopped. 2 garlic cloves, crushed 4 Tbs Sendik's Extra Virgin Olive Oil 1 Tbs fresh thyme leaves, minced 1 Tbs fresh basil leaves, minced 2 bay leaves 1/2 tsp. marjoram 1/2 tsp. savory (optional) 1/4 tsp Black pepper 1 gallon of water 1 bunch kale, rinsed and chopped 2 cans of rinsed chickpeas 1 C pearled barley Kosher or sea salt to taste Combine all ingredients, except water, kale, chickpeas and barley. Place in large roasting pan and fully drizzle with olive oil. Toss to coat. Place in 350 degree oven and roast until vegetables are tender and turning color. Once they are soft, tomatoes may be removed early. All other vegetables should have a nice caramel tone. Do not over roast. Remove vegetables from oven and place in large soup kettle. Cover with about 3/4 of the water. Add kale, chickpeas and barley. Bring to a boil and then immediately reduce heat to a slow simmer, covered. Do not let soup boil. Check broth for strength. If flavor is weak, simmer with lid off. If flavor is too heavy, add a little more water. Remove bay leaves. Adjust salt to taste. Creative options: The barley makes this a very substantial soup. For a lighter soup, use 1/2 C pearled barley. To add protein and stay vegetarian, add other canned beans like kidney or cannellini. Community Calendar Info: Scotch & Soda (blue rock).
