Kate chose this recipe from the Friends cookbook, a submission by volunteer Joanne Kline. 1 Tbl. olive oil 1 lg. onion, chopped 2-3 garlic cloves, crushed 1 tsp. oregano 1 tsp. whole cumin, ground 1/2 tsp. coriander or ginger 12 oz. chicken broth 4 oz. dry white wine 2 cups cooked chicken chunks 2 cups white beans, cooked & drained 1 6-8 oz. can green chiles 1 8 oz. can green sauce (salsa verde) Heat oil in heavy frying pan. Add onion and saute until soft & lightly browned. Add garlic, spices. Cook another minute or so to release aroma. Add broth & wine, simmer 5-8 minutes until slightly reduced. Add chicken, beans, chilies and green sauce. Simmer 10 minutes. Crush some of the beans if they're not falling apart to thicken the sauce.
