If you grow vegetables, you're eventually going to be overwhelmed with an abun- dance of produce. Even after all of your efforts to use them up or give them away, it often seems you have more than when you started. What can you do? Preservation is the key. There are three ways you can preserve your harvest: freezing, dehydrating and canning. I've been using all of these meth- ods since I started gardening and have been enjoying my harvest long into the next spring and summer. 1. Freezing. It is probably the most com- mon method for preservation. You can freeze just about anything from vegetables to fruits. The only trick here is that some produce needs to be blanched first. Pick up a good book on preservation or it may even be in the back of a cookbook you already own. Freezing is a great way to preserve any fruit, whether it's raspberries, blackberries, currants, cherries or anything else you may be growing. It works best if you lay them in a single layer on a cookie sheet with wax paper, then freeze. After they are frozen you can transfer them to a different container.
