There is nothing better in the spring and summer than a salad. This week I'm going to the kitchen and making some refreshing salads. I found these recipes in the "ADVENTures in Cooking from the North Carolina Foothills" cookbook from Advent Lutheran Church in Spindale. Broccoli Salad of SALLIE PATTERSON. Let's get started. 1 bunch fresh broccoli or a bag of florets, already cut off; 1/2 cup chopped onion (red onion is the best); 1/2 cup raisins; 1 cup mayonnaise; 3 teaspoons vin- egar (red wine preferred);1/4 cup sugar; 1 package bacon (I have used turkey bacon and it works). Mix together broccoli, onion and raisins. Put mayonnaise, vinegar and sugar in medium size saucepan. Cook together until smooth. Pour over broccoli mixture. Let sit overnight in refrigerator. Cook bacon and crumble over the top just before serving. Tasty! How about a good Broccoli Salad. This is a favorite Cranberry Fluff The popularity of cranberries has just increased more and more as their discovery as a snack or salad additive put them in demand. Cranberries are not just for Thanksgiving any more! Here is JANET CRARY'S delicious and refreshing Cranberry Fluff. 2 cups fresh cranberries, ground up; 3 cups mini marshmallows; 3/4 cup sugar; 2 cups diced apples (I used Granny Smith); 1/2 cups chopped nuts (walnuts or pecans - I liked walnuts best); 1 8-ounce carton frozen whipped topping, thawed. In a large bowl, combine cranberries, marshmallows and sugar. Cover and chill overnight. Drain juice. (Make sure you drain thoroughly). Add apples and nuts and then fold in Cool Whip. Cover and chill until ready to serve. Who needs dessert when you have this salad? Cucumbers in Sour Cream Sauce If you ask me, this is one of my favorites. I love cucumbers right out of the garden. This is a great recipe. TELL MC DONALD gives us Cucumbers In Sour Cream Sauce. 1 teaspoon salt. 1 cup sour cream; 2 tablespoons lemon juice; 1 tablespoon finely chopped onion; 1/4 teaspoon salt or sub- stitute; 2 tablespoons chopped parsley; 2 large cucumber, peeled and sliced (or 5 small). Combine all ingredients except cucumbers; mix well. Toss cucumbers in sauce until well coated. Serve cold. Tip: I put my cukes in a strainer in the refrigerator for a few hours and then toss them in a paper towel before adding to the mix. No water and much more crisp. Great salads. Now all you need is some good crackers or hearty bread to serve along with these treats. See you next week. Meanwhile, like I always say, get in the kitchen and show the love. Some of the best cooks in the world are right here in Rutherford County and our nearby neighbors! Their time tested recipes are the reason we all love a good home cooked meal.
