Iota-carra- geenan is amorphous, mean- ing it lacks a defined struc- tural arrangement. It was stretched, forming well- oriented crystalline fibers, which then gained more structural organization. In the fiber network, io- search assistant professor of food science, said many of the nutraceuticals, or nutri- tional supplements, added to foods today are not structur- ally stable. Heat, light, oxy- gen and other external fac- tors could degrade the sup- plements, rendering them ineffective. "There are many methods volves creating crystal- line-like fibers that embed the nutraceuticals, protect them from external influenc- es and prevent degradation. "Once the nutraceutical beta-carotene, lycopene, resveratrol and vitamins are thought to play signifi- cant roles in treating or pre- venting disease. Resvera- trol, for example, is found in red grape products and is believed to help prevent can- cer and benefit cardiovascu- lar health. Janaswamy's method in- for adding nutraceuticals to foods, but the one thing they all have in common is insta- bility due to non-rigid struc- tures," said Janaswamy, whose findings were pub- lished in the journal Food and Function. Nutraceuticals such as ta-carrageenan maintains a stable double-helical struc- ture with small pockets be- tween the helices that con- tain water molecules. Janas- wamy replaced these wa- ter pockets with curcumin, which was then protected by the sturdy iota-carrageenan network. Janaswamy envisions that the encapsulated fibers could then be chopped in- to small particles. Diners could reach for the resvera- trol or curcumin the same as they might salt or pepper. Iota-carrageenan and oth- er polysaccharide carbohy- drates have GRAS—gener- ally recognized as safe— status with the U.S. Depart- ment of Agriculture. "Anything of interest can be used, even drug molecules, vitamins or hormones." Janaswamy used iota- hurdles to overcome before his nutraceutical fibers are ready for dinner tables. He is working on delaying the release of the embedded compounds once consumed, as their current release time is about 30 minutes. Janas- wamy said the time would need to be lengthened to about three hours to ensure that the nutraceuticals reach the intestines, where they can be properly absorbed. Also, Janaswamy is work- ing to increase the amount of nutraceutical that can be loaded into the fibers. Susanne R. Youngren, a former Purdue undergrad- uate student and current doctoral student at the Uni- versity of Hawaii at Hilo, col- laborated with Janaswamy on this research. In an effort to increase online always comes with a degree of risk, and that's especially so when buying medicine over the Internet. Not all Web sites that sell medicine are trustworthy, and many physicians feel buying medicine online is never a viable option. Rec- ognizing the risk involved in such a transaction, the Food and Drug Administra- tion offers the following ad- vice to consumers consider purchasing medicines over the Internet. Learn about medicines be- as much as possible about the medicines they plan to purchase before placing an order.
