In a medium bowl, combine eggs, milk, molasses, coffee and oil. Add egg mixture to dry mixture all at once. Stir just until moistened (batter should be lumpy.) Heat a lightly greased, heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour about 1/4 cup water onto the hot griddle. Spread batter into a circle about 4 inches in diameter. Cook for 2 to 4 minutes or until pancakes are golden brown, turning pancakes once when they have bubbly surfaces (watch so pancakes do not overgrown.) Keep warm in a loosely covered ovenproof dish in a 300 degree oven. Serve warm. Spoon maple-flavored syrup over pancakes when served. Makes 9 to 10 pancakes. "That We May Live" from Mount Pleasant Baptist Church As you open gifts and spend time with family Christmas Day, you might want to enjoy breakfast foods you wouldn't have on just any day. Here are some unique recipes for celebrating! Gingerbread Pancakes Large loaf Italian or French Bread 6 to 7 eggs 1-1/2 cups milk 1 teaspoon vanilla 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1 cup half and half Slice bread in 1-inch slices. Lay in buttered baking dish (9x9 or 9x13). Combine remaining ingredients and pour over bread. Cover pan and let sit overnight in refrigerator. Can be adjusted for a 9x13 pan by adding a little more of each ingredient. The next morning: 1/4 cup melted butter 1/2 cup brown sugar 1/2 cup pecans or walnuts, chopped 1 tablespoon maple syrup Mix and heat in saucepan. Pour over soaked bread. Bake at 350 degrees for 40 minutes. "Cookn@theKnob" from Piney Knob Baptist Church Favorites Christmas Morning French Toast Casserole Rutherford Weekly Cooking By Allison Flynn The kindergarten through second grades hallway at Forrest Hunt Elementary has been transformed into a Winter Wonderland through the holidays and into January. The teachers have decorated the hallway for the past few years with a Christmas theme, but this year decided they wanted it to be magical even after the holidays. "We want the children to feel the magic when they walk through the halls at Forrest Hunt," said Jill Price, a kindergarten teacher. "It's kind of like the feeling you get when you go down Main Street Forest City and see all the lights. It's magical." There are 23 strings of lights lining the halls as well as snowfl akes hanging from the ceilings and winter themed door decorations and bulletin boards. The hallway will be transformed again in February to celebrate Valentine's Day.
