Don't mix. Microwave for 2 minutes. Take out and stir. Pour into a greased pan and let cook. Refrigerate for one hour prior to serving. Abby Lail 'Tis the season for giving gifts from the kitchen, and this week fudge is in the spotlight. Fudge may be one of the most given food gifts - along with fruit cake and cookies! This week's recipes come from "Cookn@theKnob," Piney Knob Baptist Church Favorites. Cake Batter Fudge 3 sticks butter, 6 cups sugar, 1-1/2 cup evaporated milk, 2 packages white chocolate chips, 1 jar marshmal- low cream, 1/2 bottle orange extract, 9 drops yellow food coloring, 7 drops red food coloring Lightly grease 13-by-9-inch pan. Mix butter, sugar and milk in a saucepan. Bring to a full rolling boil on medium heat, stirring constantly. Continue boiling 5 minutes or until candy thermometer reaches 234 degrees. Remove from heat. Gradually stir in chips until melted. Add remaining ingredients; fold in marshmallow cream and mix well. Pour into pans and let cool. Robin Atchley Dream Fudge 1-1/2 sticks margarine, 5 ounce can evaporated milk, 2-1/2 cups sugar, 12 ounces (1-1/2 cups) peanut butter, 7 ounce jar marshmallow cream Cook in a heavy saucepan on medium heat the mar- garine, milk and sugar until it comes to a boil. Boil about 5 minutes, stirring constantly. Take off heat and add the marshmallow cream, then the peanut butter. Beat with mixer until well mixed. Pour into a 6-by-10 buttered dish. Note: After the fudge has cooked for 5 minutes, act quickly. This fudge may get hard fast. You just have to judge how it looks when you have added the marshmal- low cream and the peanut butter. Last year, Northland donated over $10,000 worth of toys company-wide during their Toy Drive campaign.
