We asked the eatery’s chef what keeps patrons coming back. What do people say about The Country Club? It’s a little confusing because everybody thinks it’s a private club. We try to market it so that people understand it’s not. As a chef, what’s your goal? To create great memories for the guests. | 27 JU N E 2011 | If you had a TV show for your restaurant, what would you call it? Anything Goes. I like coming up with different things in the kitchen. Since my dad’s Venezuelan, I grew up in Venezuela, New Orleans and New York City. How much time do you spend in the kitchen? A lot. Every day. I’m not a clipboard chef. What’s different about the Vegas Strip? Our competition in Las Vegas is really tough. There are a lot of great steakhouses in this town. What makes The Country Club very different is our Southern influence and strong flavor profile.
