The 1944 Mai Tai, one of Makai's most popular, is crafted with aged Apple- ton Jamaican rum and Pierre Ferand Orange Curacao using Victor "Trader Vic" Bergeron's original 1944 recipe. "Our original Makai Margarita is created using a house-made hibiscus-ginger syrup that results in a dramatic and colorful margarita unlike any other," says Peter. "The classic Tiki cocktail Saturn is presented using Santa Cruz's Venus Spirits gin, which complements the genius recipe that won the International Bartender's Association World Champi- onship in 1967." Makai is always searching for 'new adventures in cocktails.' Every year, they hold a friendly in-house competition where all bartenders are invited to intro- duce new cocktails for potential inclusion in Makai's signature cocktail list. "All Makai staff over the age of 21 are invited to the event to taste creations and partic- ipate in a blind vote to determine which new cocktails are special enough to be included in the next menu printing. This process spurs incredible creativity and collaboration and has resulted in Makai standout cocktails such as the Punch to the Skull and the Mermaid's Kiss." They will be launching a 'secret cock- tail menu' this spring with more details available in the future. Makai also won for On the Wharf plus Outdoor Dining Patio/Parklet, and co-owner Martin Drobac, Sr. attributes these honors to a number of reasons.
