It can be too exacting, too scientific and therefore too easy to screw up. Zoe Francois aims to change all that with "Zoe Bakes." Streaming currently on Magnolia Network, the half-hour series follows the trained baker and cookbook author in her Minneapolis home kitchen as she breaks down recipes, be it pie dough, biscuits or pizza, and shares tips and tricks designed to help the home baker create a consistent final product every time. "I think people are maybe more intimidated by baking than anything else in the kitchen ...," Francois says. "And when I show them like the tricks that I know, all of a sudden like the world opens up and it's no longer scary and they're enjoying it." One problem many people have when baking, Francois argues, is in the communication of recipes. Here, it's a case of words failing to capture the meaning as measurements of ingredients – like a walnut-sized piece of butter or a heaping cup of flour – can mean different things to different people and thus create room for error. So Francois advocates for the use of scales to level the playing field. "They actually are easier to use," she asserts, "like there's less measuring cups and measuring spoons and all this stuff, it's easier and it's super-consistent. So as long as you have a really sound recipe, it's going to be consistent the first time you make it and the last time you make it because weights are always the same, whereas cup measures can really vary so much. So that's one of the things that was hammered home to me in culinary school, working in professional kitchens and now that I am trying to get every home baker to use." Another favorite trick of Francois', which viewers saw in the premiere episode, is the use of vodka in pie dough, which can be a tricky conconction for a lot of home bakers. Here, she uses the popular liquor as a substitute for adding more water, which can create gluten and make the dough tough. "You want more liquid in there so that you can roll out the dough easily and it's not crumbly and cracking," she says. "If you add vodka, you get more liquid without developing any gluten and it tenderizes the dough, so it's sort of a win in so many directions. "And you have vodka," she adds with a laugh.
