Rutherford Weekly's Favorite with M.A. ANDREWS It's getting hot and summer is officially here. Let's go to the kitchen and make some great salads. I'm using the "Pleasures from the Good Earth" cookbook from Big Springs Baptist Church. These folks sure know how to cook and share great recipes. www.shelbyinforadio.com WIN Four FREE Tickets to a Forest City Owls Game! SALAD Carrot Raisin Salad An all time favorite is Carrot Raisin Salad! CONNIE WILLIAMS shares her recipe. 2 cups coarsely grated carrots, 1/2 cup raisins, 1/2 cup mayonnaise, (if you prefer, 1/2 cup salted peanuts). Combine all ingredients and let refrigerate overnight. If using peanuts, reserve a few to sprinkle on top. This salad is so simple and always adds a nice tough of sweetness to the meal. SALAD Corn Salad MARY KISER offers us Corn Salad! 2 cans corn, drained, 1 can English peas, drained, 1 can French green beans, drained, 1 can red kidney beans, drained, 1 bell pepper, chopped, 1 jar small pimentos, drained, 1 onion, chopped, 1 pinch each salt and pepper, 2/3 cup white vinegar, 3/4 cup sugar, 1/3 cup corn oil. Mix corn, peas, green beans, kidney beans, bell pepper, pimento and onion. Mix vinegar, sugar and corn oil. Heat the later and then pour over salad and refrigerate. Serve cold. Hearty and very tasty!
