FOR SALE FOR SALE Rutherford Weekly's Favorite with M.A. ANDREWS Do you believe the weather we're having? I think it calls for some varied recipes, so here I go. This week we share recipes from the "Homemade with Love" cookbook from Gray's Creek Baptist Church in Rutherfordton. DESSERT Pretzel Salad I'm going to the kitchen and the first thing I'm going to make is a Pretzel Salad. This recipe is from JESSICA KEEVER. 2 cups broken pretzel sticks; 3/4 cup butter, melted; 3 tablespoons sugar; 2 cups Cool Whip; 1 cup sugar; 1 6-ounce package strawberry Jello; 2 10-ounce packages frozen strawberries; 2 cups boiling water; 1 8-ounce package of cream cheese, softened. In the bottom of a 9 x 13 inch baking dish begin layering. Layer 1: combine pretzels, butter and sugar. Spread on bottom. Bake in preheated oven at 400º for 8 minutes. Be sure NOT to over cook. Let cool. Layer 2: whip cream cheese and 1 cup of sugar; fold in Cool Whip; spread over cooled pretzel crust. Layer 3: mix gelatin, water and thawed strawberries; let cool until almost set; spread over cream cheese mixture; chill and serve. MAC & CHEESE Crock Pot Macaroni & Cheese Next, I'm going to make Crock Pot Macaroni and Cheese. This recipe is shared by TAMMY MACE. I'll be suggesting some added variations. 8 ounce elbow macaroni; 3 cups shredded cheddar cheese; 1 cup whole milk; 1 can evaporated milk; 1 egg; 1 stick butter; 1/2 tsp salt; 1/2 tsp pepper. Cook and drain macaroni according to package directions; While macaroni is boiling, melt butter in microwave. Add beaten egg and remaining ingredients, mixing well. Combine mixture to cooked macaroni and pour into a crock-pot that has been sprayed with nonstick cooking spray. Cook on high for 30 minutes. Reduce heat to low and continue cooking for 2 hours. Variations I have done and enjoyed. Add 1 or 2 cans drained corn to the mixture. Another is to cube some ham slices and add to the mixture. (I usually go to the deli and ask for a few slices of 1/2 thick ham and then I cube them). CASSEROLE Easy Egg Casserole Next I am going to make a quick and easy egg casserole. Casserole Brunch is a recipe from FRANCES MORROW. 6 slices white bread; 1 pound bulk sausage (cooked & drained); 1 large pkg shredded sharp cheddar cheese; 6 eggs; 2 cups milk; 1 tsp salt; 1/4 tsp pepper. Preheat oven to 350º. Lightly grease 13x9'' baking pan or oven proof casserole dish. Coarsely tear bread into pieces. Place bread in bottom of pan; sprinkle with sausage and cheese. Beat eggs, milk, salt and pepper in medium bowl with wire whisk. Pour over bread mixture in pan. Bake 40 to 45 minutes or until mixture is set in the center and lightly browned. You can serve this anytime. If you like it spicy, use hot sausage. That's the good eats for this week. You have no excuse not to "get in the kitchen and show the love".
